Tracy's Tomato Artichoke Rice Salad
Very tasty! I've made this recipe many times as a side dish or as a vegetarian wrap. I add toasted pine nuts too. I also like adding roasted red pepper to the mix for some extra color.

Pina Colada III
I love this recipe. I often don't have all the ingredients required for other pina colada recipes, but this recipe always comes in as a great substitute. To be honest, I just stick with this one now. It's simple and yields wonderful results. I've made this many times for company and always get raves. The only thing I do different is add more ice. Thanks for a great recipe!

Roasted Potatoes with Tomatoes, Basil, and Garlic
Delicious! Five stars all the way. Tastes wonderful, and as noted below, the dish is visually appealing. I added more garlic. Didn't have as much fresh basil on hand, but I used what I had and added some dried seasonings. Came out excellent.
