Pumpkin Chocolate Chip Cookies III
This recipe is really good. I made it last night and doubled the recipe. I used half wheat flour and half all-purpose. I also used half vegetable oil and half applesauce. I used 3 1/2 t cinnamon and 1 t each of cloves, ginger and nutmeg (keep in mind that I doubled the recipe). I also added some red food coloring as others suggested. I cooked them at 365 for 12 1/2 minutes. Next time I make this, I will use about the same amount of cinnamon, but will cut in half the amount of the other 3 spices. The cookies are awesome, but the spices are a bit overwhelming. I also think I will reduce the amount of chocolate chips I use by maybe one fourth. Call me weird, but I think they are a bit too chocolatey. I love the taste and texture of the pumpkin and think it would be a bit more enjoyable with a little less of the chocolate chips. Overall, though, fantastic recipe!
