About this Cook
I am a stay at home mom of two. I come from a long line of self taught fabulous cooks. Everything that I have accomplished in the kitchen has been learned by helping in the kitchen since I was a little girl, self-taught or things that I have learned from watching cooking shows (which I LOVE!)and never being afraid to try a recipe. My seven year old (very picky) son says that I make the best dinner in the world - that's probably the best compliment that I can get!
My favorite things to cook
I really enjoy cooking dinners - everything from quick and easy meals on a busy night or a big Sunday dinner that takes hours to cook. There is no better reward than serving up a delicious homemade meal to your family and friends - no matter how long it took you. Getting a nutritous and yummy meal on the table in record time can be just as rewarding as serving up a really time consuming and traditional family meal. I really love spending a cold winter day in the kitchen cooking up a hearty stew or a roast while the fire is going in the fireplace and we don't have a thing to do but spend time together as a family.
My favorite family cooking traditions
The holidays are full of yummy foods that have been cooked in our family for decades. Every Christmas my Memere makes the best French Meat Pie. On Thanksgiving the whole family gathers at one place after dinner to see one another and have dessert. It is always so fun to see the different desserts that everyone works so hard on. Also, usually on Father's Day, we get together with my husbands family and have an awesome New England boiled dinner with lobster, little necks, sausage, corn and of course lots of melted butter and lemon to dip the juicy lobster in!!!!
My cooking triumphs
Guacamole is probably my best and most requested thing that I make! I am asked to make it all the time. I have had people ask me to make it for them so that they can give it to someone that they know who loves guacamole. I love making this simple and fresh dip for a summer bbq or for a mexican fiesta complete with the margaritas!
My cooking tragedies
I love to make Jambalaya and not the kind from a box. This meal is hit or miss with me. More often than not the rice will not cook the way it should and I end up with crunchy rice that is just not edible. When this happens I usually end up cooking it way too long to cook the rice and eventually I just end up with one big pot of mush with chunks of smoked sausage, onion and peppers.

Gingered Pork Chops in Orange Juice
This was a tasty flavor profile. I did make some of the suggested changes to the recipe and the chops turned out moist and flavorful. I used boneless chops so I only cooked it for 30 mins and that was plenty. I added garlic powder & paprika to flour mixture. I cooked the onions in the pan and added only 1 cup of OJ to the onions as they cooked to deglaze pan and about 1 tbsp balsamic vinegar and about 1 tbsp cornstarch to thicken sauce. Served this up with some mashed potatoes and veggie and everyone loved it!

Melt-In-Your-Mouth Meat Loaf
This was really good. I didn't have the minced onion so I added a 1/2 of a yellow onion finely chopped. Very easy to prepare. I wouldn't wait until 15 minutes left to put the sauce on next time. I might even go ahead and put it for the last hour to really get it nice and cooked down.

World's Best Lasagna
this was good. It wasn't AMAZING like I thought it would be from all the reviews. I doubled the recipe and made two lasagnas. I think it needed more ricotta to make it a little creamier. The sauce was good, but I did add double the spices and I should have added more salt too. The sauce would make a great simple meat sauce over pasta.
