Downeast Maine Pumpkin Bread
I haven't made pumpkin bread from scratch before, and it turned out perfectly! I ended up making 4 mini-loaves and 10 muffins b/c I didn't have regular loaf pans. I had seen another recipe about adding butterscotch chips to pumpkin muffins, so I tried it with half of the recipe. They added a nice sweetness to a perfectly moist treat. Thanks for the recipe, I'll be taking it to my parents' house for dinner on Thanksgiving.
