I'm a mommy to 2 adorable human kids a Newfoundland dog, ragdoll cats, hamsters, a Siamese fighting fish and a Venus flytrap... ok, so that last one is a plant, but hey, I still have to feed it! ;)
My favorite things to cook
I have a sweet tooth and love to bake sweet things. I also enjoy making things that taste and look beautiful. Especially tall, layered birthday cakes for the people I love.
My favorite family cooking traditions
Growing up, my Father always had a large, beautiful garden. I complained about helping him harvest everything back then. I really miss it now that he is getting older and doesn't plant as much. There's nothing like baby garden potatoes you just dug from the ground, boiled with a little butter or freshly baked red currant pie, after picking all the berries yourself, with vanilla ice cream.
My cooking triumphs
One year I asked my children what their absolute favorite cake was. The things they both most liked about different cakes were raspberry jam, caramel, hot fudge and whipped cream. I invented this layered birthday cake that absolutely everyone loves. It incorporates all of my children's favorite things. Every year the teachers at their school look forward to the cake. It weighs at least 10 pounds and is expensive to make but I don't mind because it's worth it.
My cooking tragedies
It makes me so angry when people rate a recipe on the changes made in the reviews. You should rate the recipe on the original recipe not use a changed recipe and then say it's 5 stars after you have totally changed the ingredients! After you make changes it's a completely different recipe! Another thing that has caused me some cooking tragedies... I have to laugh when people say things like, "well, I gave this recipe only 1 star because I didn't have any chocolate chips at home so I used sesame seeds instead ...and the recipe didn't turn out?" Hello! That's not the recipe's fault. So, as you can see, I've had some tragedies caused by these sorts of things, that I am not quite over yet, lol. Just be careful and ALWAYS check the reviews BEFORE you make the recipe. :)

Butter Chickpea Curry
This recipe was a big hit (I wish I had doubled it)! It could not be quicker or easier. I used coconut oil but any oil will do. I used evaporated milk because it was all I had and it went well. It tastes creamier than regular milk and it has less fat than cream. Everything else was exactly what the recipe called for. The flavour reminded me very much of "Butter Chicken" that you get at an Indian restaurant. I'm lazy and like to do things in one pot so I thinly sliced the potatoes and threw them in with the oil, onion, garlic and spices. I also threw in the chickpeas at this point. I like their flavour fried, plus they pop and jump in the pan and that's fun. I sautéed all of that together until the potatoes were almost cooked. This step really helped bring out the flavour of the spices nicely too. The last thing I added was the tomato soup and the milk. My Fiancé hates canned tomato soup, well any tomato soup really. He couldn't even tell there was tomato soup in this recipe and went back for seconds and thirds. Thank you so much for a great recipe.

Home-Style Brown Rice Pilaf
This is an interesting combination of ingredients. You expect it to be Asian but then there's butter, chickpeas, black pepper and parsley which are not usual ingredients in Asian cooking. The first bite is a bit bland but then it really grows on you. I found myself coming back for more an hour later. I preferred the taste of the soy sauce added while cooking to adding it afterward. It seemed to blend in more and taste like it belonged. I had never fried chickpeas before and boy was that fun! They sound like popcorn popping and jump all around in the pan as their skins pop open. Over all, it was a pleasant tasting and very satisfying dish. Thanks for the recipe, Jen.

Poor Man's Caviar
Delicious and nutritious! In addition to eating with the chips or pita, this fills warm, soft tortillas quite nicely. Use avocados that are just ripe - not over ripe avocads that are soft and mushy. Also, mix gently. This will prevent your Mexican Caviar from looking very unappetizing. Thanks so much!
