Broccoli and Sausage Cavatelli

I loved this one! Very easy, with tons of flavor. Used half the pasta called for (subbed penne) to scale it down for a smaller batch, left everything else the same. I'm not a huge pasta lover, but I couldn't stop eating this!

Ultimate Spicy Spud Soup

I really liked this! It's very simmilar to Olive Garden's soup. Omitted the cayenne, because using hot Italian sausage added plenty of heat. Left the skin on about half of the potatoes, used broth instead of water, added a little chopped carrot, celery, and spinach. Pushed a potato masher through it a couple times to thicken it up. The only reason I'm not giving it 5 stars is because my husband didn't like it, so I probably won't make it again.

Holiday Chicken Salad

I tried this tweaked: omitted onions, bell pepper, and pecans, added a granny smith and grapes...but didn't like the mayo dressing. So then tried it with a sour cream and fresh dill dressing...still didn't like it. So I think I just don't like chicken salad. As far as they go, this is probably a good recipe, and I'm just a lousy judge.

Cheesy Creamed Spinach Casserole

Wasn't crazy about it, but I'm guessing that if I'd altered it like many other reviewers did, it would have been right for me. Adding cream cheese, maybe? It wasn't as creamy as I'd have hoped; the sour cream seemed to break down and kind of separate in the oven...

White Chocolate Raspberry Cheesecake

This didn't quite work out for me for 2 reasons. The white chocolate that I used gave off a ton of grease during baking, which seeped into the crust and made it mushy. So use the best you can find. Also, some of the larger globs of raspberry sauce caused the cake to form these huge cracks, so the final result wasn't pretty. But it could have been if I had evenly drizzled a thin ribbon of the sauce instead of trying to be artistic and clever. So it's all my fault, and the cake will probably come out fine if you watch out for those two mistakes. Oh, and do yourself a favor and use a waterbath.

Irish Cream Chocolate Cheesecake

This was very good, perfect consistency. I used a waterbath (no cracks), and left it in the oven until it was cool, then refrigerated overnite. My center was still a little bit wet, that's why only 4 stars, so next time I'll let it cook 20 minutes at 450. Because of that, my center got a little bit messy when I sliced it up, but I stuck a sprig of mint and some nasturtiums in the center (how clever am I folks?)and it was beautiful. Tip: you want to be sure to sift the cocoa powder and powdered sugar 'cause lumps will SHOW, and I used 1/2 cup booze.

Irish Cream Truffle Fudge

I say three stars because the flavor was great...the liquor REALLY came thru, yay!...but the texture didn't seem quite right to me. I think I prefer my fudge to be a little more, what...crumbly? sandy? I don't know exactly. This recipe really just came out like a re-hardened pan of melted chocolate, and I totally accept the blame if it lies with my method. Follow everyone's advice and line your pan with foil, and use an 11x7 inch pan, or your fudge (aka: dense brick of chocolate with booze) will be two inches tall.

Potato Soup Mix

I was pleasantly suprised! Good to have on hand for a cold, lazy night. I used onion powder instead, and cut back on both the bouillon and seasoning salt just a little after reading other reviews, and it was good. This recipe could really benefit from a sprinkle of sliced green onions or chives and crumbled bacon, but is really just fine as is. And does it have any fat?!?

Gingerbread Men

These rolled out very cleanly on waxed paper. The flavor was mild enough for my kids, not too heavy on the spice but still distictly gingerbready. All I had was instant vanilla pudding mix, and it came out fine. I measured the flour by scooping it, so the dough was firm enough to roll out immediately, and didn't need the chill time. 8 min bake time was perfect.

Tasty Spinach Treats

These little appetizers are good straight from the oven, but not at room temp. I wasn't crazy about the biscuit crust, very "bready"...I'd like to try again with frozen phyllo cups. It would be more attractive and a little more delicate. Flavor of the filling was good; I added about three cloves crushed garlic to the onions, but noticed that the nutmeg flavor came thru a little too boldly. Maybe 1/2 tsp less would be better? Had lower-fat mayo on hand, and it worked fine.

Pumpkin Turkey Chili

The ingredients in this recipe really appealed to me, and I love the low fat, nutritious element. I added cumin, cilantro, and corn, but it was still just too bland. It was so thick that I couldn't stir it, so added a full 2 cups of chicken broth to get a thick chili-like consistency, but it needs something more. And since I don't know what...I don't think it's a repeater for me.

Potato Salmon Patties

Easy to put together and good flavor. I think that pan frying it lends a slight heaviness to it that I could do without (I'm not crazy about the taste of fried foods), so next time I'm going to follow the suggestion of baking them in muffin tins. We'll see how that works. I'll also be using a creamy horseradish-dill sauce recipe for dipping.

Banana Cream Cheesecake

I decided to try this out only with the cheesecake base, to see if the flavor was what I was looking for, before I messed with the topping. The flavor was good, but the texture didn't seem like cheesecake to me. The banana made it less smooth and creamy than I'd prefer, although it could have been that I didn't mash the banana smooth enough. Not exactly what I'm looking for.

Poppy Seed Bread with Glaze

The batter was very runny, and had me a little worried, but baked up fine. Made kind of short loaves, I wonder if my pans are bigger that 9 inches. But great flavor, and very pretty.

Deep Dish Brownies

These were just right. I have a problem with all of my brownies (and maybe it's the altitude) having a crust that's too hard and dry and an undercooked center. So when I saw the edges of this batch getting high I took it out of the oven, which was a mistake. Next time I'll let the center get puffed, too, before I get all worried. The edges were fine: thick and moist and chewy. This is a good recipe, and I'm going to try again letting it go the full 45 minutes, maybe even 50. It's still perfectly fudgy.

Chewiest Brownies

They live up to the name, that's for sure. Almost too rich for me, and the bake time was a little short. I agree with another reviewer that the recipe could be thinned out with just a little milk; my dough was so thick and almost crumbly that I had to press it into the pan (but that's probably the result of heavy-handed measuring.)

Banana Oat and Bran Cookies

Like others, my dough was more like runny batter, and I had to add CUPS of dry ingredients to get a workable consistency. The recipe should probably start with one small banana instead. I won't repeat these, the taste and texture were just not appealing. I threw them out. I'm beginning to resign myself to the idea that a healthy, delicious cookie is an oxy moron.
