I didn't let this recipe sit in the fridge overnight. I just baked it as soon as I was done putting everything together. It was still pretty darn good, quick and easy to make. I didn't have peaches so I used some mcintosh apples. I also only used regular whole grain wheat bread. This is a great alternative to cereal or regular french toast for breakfast. Me and my 19 mth old son ate over half the pan in one sitting!!!

OMG! This is a favorite at my house. I make it exactly like the recipe calls, except I add a bit of extra garlic. If you have a hard time finding the right cheeses you can try any of these: italian cheese blend, mozarella, and parmesan. The wal-mart I shop at never has a good selection of cheese, and I usually end up with a variation of those three. YUMMY, YUMMY! Watch out, because you can easily eat this in one sitting!
