Mexican Rice II
Fantastic! I like to mince 2-3 canned chipotle peppers in adobo sauce and add it to the tomato sauce before adding it to the rice. Adds some heat and a nice smoky flavor. I also like to add 1/2 diced green bell pepper and some drained canned corn. Excellent recipe.
