Pumpkin Pie Bars

I followed other reviewers' advice and used condensed milk in lieu of regular milk, and I included pecans in the topping. However, it took much longer than the suggested 45 - 50 minutes for it to be finished.

Angel Chicken Pasta

I cut the chicken into pieces and saute it in butter. Then I add the rest of the sauce ingredients into the pan and cook. This way, it is a much faster recipe. It takes about 20 minutes beginning to end.

Roasted Red Potato Salad

I have never been good at making potato salad - until now. This will be my go-to recipe. I did add a bit of olive oil, salt, pepper, and lots of herbs (dried rosemary, thyme, etc.) to my potatoes before roasting them, and I used scallions instead of regular onions.

This was a simple and delicious recipe. I added in black beans and used diced tomatoes with jalapenos. I did not add any additional water, but it was a bit liquidy anyway.

As another reviewer suggested, I made this in the food processor. I added vanilla to the egg and sour cream mixture. I made mine with crasins, white chocolate chips, and walnuts.

No Bake Peanut Butter Pie

This is so easy and so delicious. I followed some recommendations and made changes. I made the filling with 1 8oz. package of cream cheese, 3/4 c. confectioners sugar, 1 c. peanut butter, and 3/4 container of Cool Whip (I use the rest to top the pie with). I use all low-fat ingredients and all natural peanut butter. I pour it all in a pre-made Oreo crust and decorate with fudge topping.

Grilled Mahi Mahi

I made this for dinner tonight but with some changes. It just seemed silly to use canned tomatoes when Jersey tomatoes are so good in the summer, so I made a fresh pico de gallo and used that instead with about 3 tbs. melted butter and 1/2 cup of white wine. I didn't cover it as it cooked, and it didn't take anywhere near 35 minutes. I also omitted the cheese.

Pig Picking Cake III

This was a huge hit for 4th of July. However, because I was bringing it somewhere (and I imagine it isn't incredibly sturdy), I made it in a 13 x 9" pan. I also added 1/2 cup of coconut to the frosting.

Eggplant Casserole

I made some significant changes, but it was very good. For the casserole, I used meatloaf (ground veal, beef, and pork) instead of ground beef, a large can of chopped tomatoes instead of fresh tomatoes, and I added fresh basil, garlic, a can of tomato paste, and a half a pound of bowtie pasta. I also changed the topping. Instead of bread crumbs and butter, I used grated romano and mozzarella cheese.

Spinach Turkey Roll
