Yummy Sweet Potato Casserole

Amazing!!!! I used condensed milk and extra vanilla - not sure either were necessary. This recipe will be my staple sweet potato dish. Not that I dislike the marshmallow topped sweet potato dish, but this one adds that extra flair. I would proudly take this dish to a holiday pot luck!

Walnut Pie Crust

Mine turned out very greasy. Next time I'll add a bit more walnuts. Very, very good though. This recipe will be used frequently.

Homemade Pancake Mix

Not crucial, but I think adding just a little bit of salt as suggested in other reviews puts this recipe over the top. My family loves homemade pancakes on the weekend and I LOVE having this mix on hand.

Salsafied Chicken and Rice

Really quick to throw together! I added garlic powder and onion powder to the chicken, crushed red pepper instead of black pepper. Instead of the olive oil, I cooked the chicken in 1/2C of broth. The rest of the broth was omitted because I used cooked rice instead. Next time I'd add cumin and fresh cilantro. Great and quick!

Cereal Treats II

Very versatile recipe! For rice cereal though, I'd either add more cereal or less marshmallows. The treats were very tough - enough to make my jaw hurt yet I kept eating them LOL! I used a non-stick pot to melt the marshmallow on the stove top. Made cleaning sooo easy.

Quick and Easy Pancit

So-so. Not bad, not great. My friends from Guam made a dish they called Pancit. This is not it. Again I must stress, this is not bad. Different island, different ingredients.

Campbell's® Lemon Broccoli Chicken

Pretty good! My husband loved it even though he doesn't like cream sauces. I used cubed chicken instead, cooked with 1T garlic powder and 2t lemon juice (didn't really taste it anyway). I simmered cream of chicken together with broccoli, 1/4t oregano and a pinch of dill. Then added the soup to the chicken to simmer for 5-10 minutes. Server over rice. This will be great for winter.

Beef Enchiladas II

Exactly the kind of recipe I'm looking for these days - quick, easy, flavorful and with built in clean up time (20 mins in the oven). I prepared the meat with taco seasoning, garlic and onion powders and green chilis. My husband loves this dish and I love that not only do we get leftovers but it calls for flour tortillas. Yes, I would rather go the traditional route with corn tortillas but I can't eat corn. This one goes on the list!

Asian Ground Beef and Pepper Saute

Really good and light. The "sauce" isn't overpowering, just enough to moisten and mildly flavor the dish. I added broccoli, used red instead of green peppers, only had ginger paste on hand along with dried parsley. Dried parsley doesn't usually do it for me, but that was a good find - next time I'll use fresh basil to recreate the flavor of one of my favorite Thai restaurants. Any mix of veggies will do but the broccoli was nice. I'll add thin, baby green beans next time I get them at Costco. Quick fix and my husband enjoyed it so this is definitely a keeper.

Bow Ties with Sausage, Tomatoes and Cream

My husband thought this was *amazing* but I just thought pretty good. He's first gen Italian so... it's a keeper. I added 1 tsp italian seasoning to the diced tomatoes (regular, not roma), next time I'll add more along with diced red peppers. On suggestion of the submitter I combined the pasta with the sauce before serving which solved the liquid-y problem others had.

Tarragon Chicken Casserole

I added 1/2 chopped onion and 2 tsp garlic powder when cooking the cubed chicken. Had to omit the noodles as I didn't have any. I added some bread crumbs as a topper. Not too bad but sweet. I'll add fresh garlic next time.

Mini Green Bean Casserole

This is a great quick recipe. Yes, it lacks the heavy cream of traditional green bean casseroles but I will definitely make this again. I omitted the mushrooms, cornstarch and the crispy onions for dietary concerns. Added tahini sauce for body, sesame oil for flavor and topped with sesame seeds for presentation. Excellent, healthy dish for green bean lovers!

Marinated Chicken Breasts

By far the best marinade I've found so far. This time I subbed wasabi powder for the horseradish. Both times I've used tonic with a Tbsp of lemon juice. Excellent!

Green Onion Wraps

A home run! Guys and girls alike. I used roast beef but I'll probably use corned beef next time - the black "rind" of the roast beef has a tendency to get stuck in your teeth. Not what you want to think about at a party! I'll also cut the rolls a little smaller. They turned out a tad more than a mouthful somehow. Not bad for my first appetizer!

Quick Lemon Dijon Chicken

Quick and easy! This recipe is definitely a new go-to meal for weekdays when I have less time to think about it and prepare. I'll use a little less Dijon next time, per some reviews I added soy sauce and sour cream. Served over rice with steamed vegetables. Healthy, quick and tasty!

Whole Wheat Snickerdoodles II

I made these at my boyfriend's place so I was using limited resources. I used white spelt flour and rolled them in just sugar - AMAZING ... and easy! I made the full recipe and only a couple made it to morning ;) I still get requests for these but I'm waiting until Fall before I heat up the kitchen again.
