When my husband is out of town, my son and I eat a little differently. I also take the opportunity to try new techniques and tonight, a throw-together dinner. About this Cook
I cook nearly every day for my gracious husband and not-too-picky toddler. They make tackling the "What's for dinner?" question a welcome challenge. All the recipes I use I tailor to our preferences: make it from scratch if you can, meat makes a dinner, fresh veggies from the farmer's market, TRY to go easy on the dairy and above all, gluten-free.

My cooking tragedies
Oh this list is endless, or seems to be. The worst of which were the fires (yes, plural!) I started in my kitchen. Failed dishes seem different however, I throw it out if inedible and move on. Cooking for guests, though, is uncharted territory...

Jalapeno Strawberry Jam
This was my first experience with making jam and it turned out beautifully. Unfortunately my jalapenos molded before I got around to making this so I omitted them. My husband and I freaked at the amount of sugar it called for so we stopped at 4 cups. I was afraid it wouldn't gel but not so - It's perfect. Next time I can't wait to make it spicy :)

Split-Second Cookies
Mine turned out flat but that didn't stop us from devouring them. Great shortbread-type flavor.

Chicken Wild Rice Soup
Hearty and delicious! Through a shopping error we only had boneless thighs on hand. The extra flavor (gamey-ness) of the thighs really complimented the herbs and veggies even though we're strictly a chicken breast type family. I used leeks because we had them and omitted the creamy soup and it turned out fantastic. We'll make this again and again.
