Unlike most recipes, these cookies actually tasted of lemon. They could have been a little tangier, but the flavour was almost perfect.(And from a vegan recipe, no less!) I found the vegetable oil made them quite greasy, but nobody else seemed to notice - I had several requests for the recipe.

This icing is very easy to work with - I used it with a group of 7 year olds and had hardly any accidents or mess, and it dried hard enough to resist the most brutal of droppings. (The quantities suggested did seem to make more than I was expecting, though.)

I used very fresh fruit and chilled the tart for several hours before serving, and it turned out beautifully. It's perfect for entertaining - simple but impressive.
