Bourbon Pecan Chicken

Thank you. My husband loves this, and my 5yo likes it without the sauce. I fried with a lot less butter than stated, and blackened a few pieces by sprinkling brown sugar in the pan and cooking the chicken on top of it. Difficult not to burn the sugar too much, though

Anthony's Chicken

Sauce went fine with pasta (mini-shells, not penne) for me. I only coated one side of the chicken. I seared the other side, then drizzled it with lime juice while the breaded side was cooking. Really makes it pop. Would like to know if "Anthony" likes it. Don't need near that much oil to make it tasty in a non-stick skillet. Worth the prep.

Brazilian Chicken with Coconut Milk

My husband said that to call this Brazilian, there must be a town in India called Brazil. Too spicy for me, but he loved it. I didn't find the sauce bland, but I did reduce it in the skillet.

Hobo Dinner

I would not cook as the recipe says!!!We loved it, but I tossed the veggies in olive oil, rosemary, and a couple of other spices. About the time the vegs started getting tender, they also looked pretty dry, added seasoned chicken broth. Putting meat on top so juices flow into the vegs may make more moist as well.
