Coconut Curry Tofu
I really like this recipe, but modified it a fair amount. Didn't have any curry powder so used 1 tsp garlic, ½ tsp coriander and ½ tsp cumin. Left out the tomatoes. Used frozen cut green beans instead of the bok choy. Came out great.

Tofu Chocolate Pudding
I added honey because I found this not nearly sweet enough. Even then, though it wasn't bad, it was just lacking something.

Downeast Maine Pumpkin Bread
Excellent as is - moist and yummy. However, I've recently been experimenting with a fat substitute called Z-trim. I tried replacing half of the oil with Z-trim and the result was just as good.
