Three Cranberry Relish

In general I'm not a big fan of cranberry relish - but I like this one! Great flavor! Easy to make! I didn't make any changes to the recipe.

Country Quiche

I thought this quiche was a little bland, but it could easily be improved by adding a few favorite ingredients. The main issue is that the ingredients do not fill a deep dish pie shell. Either make more filling or do not use a deep dish pie shell.

Spicy Black Bean Soup

This is the best black bean soup I've ever had. It was a tad salty for me, so I will experiment with decreasing the salt by 1/2 tsp or so. I used a pound package of smoked sausage instead of the ham. Everything else I did as listed. Wow! Great soup.

Pesto Pasta with Chicken

This is a quick and simple dish. We like it with more pesto and more sun-dried tomatoes than listed in the recipe. When I remember (not always) to cook the chicken the night before, it becomes a really fast way to put a delicious pasta dish on the table quickly.

Terry's Texas Pinto Beans

This is a great basic bean recipe. I am "into" heirloom beans and am looking for simple recipes. In addition to making this with pinto beans, I have made it with Yellow Indian Woman heirloom beans. Great. Next I'll try it with Yellow Eye.

Greek Rice Salad

I hate it when people rate a recipe when they actually made it differently. But...I was put off by the submitters instruction that the tomato and cucumber meant the salad needed to be eaten the same day. So, I left them out and served tomato, cucumber and avocado on the side. The salad, which I had doubled, lasted well for almost a week.

Texas BBQ Chicken

Yum! Everyone at our house liked this. We were in a rush the first night so we ate them as chicken breasts. The second night we ate the leftover chicken shredded over rice. Even better!

Hummus III

I made the recipe as written and the consistency was terrible. It was so thick my food processor was bogging down. I added more olive oil and some vegetable broth before I got anywhere near something that resembled store bought hummus. Maybe that's the point? Anyway, the flavor is good, but for me, the ingredient proportions seem off.

Lentil Burritos

I started an sustainable living experiment last month...to eat a lunch meal every day that is based on dried beans or legumes. Lentil Burritos is a good simple recipe to keep me on track. I eat it in a tortilla with cheese, salsa, and whatever else I have on hand. Good. Simple. Sustainable.

Southwest Chicken

I like this recipe. We eat it over rice with sour cream, cheese and green onion. I increase the cumin in the recipe to 1/2 tsp and sprinkle on some garlic salt before it simmers.

Best Ever Split Pea

Usually I like to add a little meat to split pea soup but this one doesn't need it. I've made it as submitted and its very good. Also, one time I was short on chicken broth but I had a can of Trader Joe's onion soup in the cupboard. That was very good also.

Slow Cooker Taco Soup

Good pantry/freezer recipe. (I'm always looking for emergency meals that don't require a trip to the store.) The flavor of the canned tomatoes in this soup were a bit overpowering for me. I would try substituting a can of broth for one of the cans of tomatoes. Or maybe omit the can of tomato sauce.

Penne with Chicken and Pesto

Good, simple recipe. It needed a little something to be a very good or great recipe. Maybe more parmesan cheese? Or maybe just more sauce for the amount of pasta? I might try it next time with just 12 ounces of pasta.

Impossibly Easy Cheeseburger Pie

I think my mom was making this when I was a kid! Tonight I served it to my picky college student and she liked it. Next time I'll try the taco seasoning idea and maybe pepper jack for the cheese.

Spaghetti With Red Clam Sauce

I made the recipe as written, except I added the clam juice to the sauce and simmered it longer - about 90 minutes - before adding the clams. Really good!
