Spicy Black Bean Soup
This is the best black bean soup I've ever had. It was a tad salty for me, so I will experiment with decreasing the salt by 1/2 tsp or so. I used a pound package of smoked sausage instead of the ham. Everything else I did as listed. Wow! Great soup.

Pesto Pasta with Chicken
This is a quick and simple dish. We like it with more pesto and more sun-dried tomatoes than listed in the recipe. When I remember (not always) to cook the chicken the night before, it becomes a really fast way to put a delicious pasta dish on the table quickly.

Terry's Texas Pinto Beans
This is a great basic bean recipe. I am "into" heirloom beans and am looking for simple recipes. In addition to making this with pinto beans, I have made it with Yellow Indian Woman heirloom beans. Great. Next I'll try it with Yellow Eye.
