Apple Lemon with Cinnamon Muffins
The muffins were great. I modifed the recipe by leaving out the lemon juice based on comments about tutti-frutti-ness. I also added 1 1/2 teaspoon cinnamon to the dry ingredients. The flavor was wonderful. Good cinnamon apple flavor, lemon hints.
One problem I ran into was the butter aglomerating when creaming.
