Shrimp Scampi Bake

Loved this recipe, it's so easy and my family likes this scampi version better than our favorite Italian restaurant. Added a little more garlic and I followed others suggestions by adding some Old Bay and Parmesan. May try the Italian breadcrumbs next time too.

Alfredo Sauce

We really liked this sauce, though I didn't have any heavy cream so I used half & half instead. To thicken it up towards the end I added an additional 1/2 cup of finely grated parmesan to the sauce and a little Wondra flour. Sprinkling with garlic salt to taste made it perfect.

Country Apple Dumplings

I love this apple dumpling recipe. When I make it, I cut the sugar to 3/4 cup and it's still plenty sweet. Not as good with Sprite. Mountain Dew is the key! The recipe is always a hit and all my guests ask for the recipe. So easy too!

Spanish Flan

Got rave reviews from my coworkers...some who never liked flan before. One asked if she could lick the plate and all asked for the recipe. I did follow some of the other reviewers suggestions by baking in a water bath and adding 1/4 cup water to caramelized sugar to create more glaze. Also, I did not refrigerate overnight before turning on to a serving dish. I was worried the sugar sauce would harden too much to the bottom of the glass pie dish and not release well. I just let it cool a little after baking and then turned it gently out. It is very sweet so you can adjust the sweetened condensed milk ratio to taste a little.

Spinach Salad With Berries and Curry Dressing

My husband and I loved this, kids did not(of course!). Didn't have any Dijon so I substituted spicy brown mustard instead and it still came out great. The dressing is delicious. I'm making this again tonight as I have lots of strawberries and blueberries on hand.

Baby Back Ribs

These ribs are soooo easy and soooo good too! I also drain the excess liquid after baking, reglaze with additional BBQ sauce and broil for a few minutes to carmelize. Always a hit at my house and especially for football parties.

Tilapia Pitas

In a word...yum! I switched the recipe up just a little bit by lightly breading the tilapia with homemade bread crumbs for a nice crunch. I served the fish "soft taco" style in a flour tortilla and left the anchovies out of the sauce. This meal was a real hit at my house and my visiting friend raved too.

Cottage Cheese Chicken Enchiladas

My husband absolutely loved these enchiladas! I did it the speedy way and used 2 cans of Costco/Kirkland white meat chicken breast and only one small can 4.5 oz of chopped green chillies. The rest of the recipe, I followed to the letter except for adding a can of sliced black olives over the top. So easy to make too. My 5 year old ate every bit and told me, "I like these mom!" I followed another reviewers advice and let the dish set for 5 minutes before serving...not so messy that way. We're eating the left-overs tomorrow for dinner...YUMMY :) When I have more time, I use chicken pulled from a rotisserie hen. Makes this recipe even more delicious!
