Cinnamon Belgian Waffles

Best waffle recipe I've tried. I doubled the vanilla, cut the salt in half, and added 1 T malted milk powder for flavor. I also reduced the buttermilk to 2/3 c and added 1/3 c club soda to make the batter even lighter.

Slow Cooker Barbecue Ribs

Easy recipe to make. While pre-baking the meat (country-style ribs), I heated the sauce, substituting BBQ sauce for the chili sauce. Husband liked it a lot.

Insalata Caprese I

Made with only fresh mozzarella, sweet onions, caprese tomatoes, fresh basil and olive oil. Sprinkled kosher salt on the sliced mozzarella, onions and tomatoes and let them drain several hours (in separate colanders) before combining. Really good.

Mexican Bean Salad

Amazing taste - made it for a family reunion and everyone wanted the recipe. I used shallots rather than red onion, cut the oil and vinegar by half and cut the sugar to only 2 teaspoons. Top with avocado if serving immediately.

Traditional Coffee Cake

I would have given this a five for it's taste, appealing crunchiness and looks, but there has to be something wrong with the recipe instructions. How can you knead dough that's the consistency of cake batter? Since it obviosly wouldn't have worked, I didn't knead before the first rising, but I added flour and kneaded before the second rising.

These turned out really good. I ended up cooking them too long, thinking that they weren't done yet because they weren't very brown, so they were a little too crunchy. They weren't greasy at all - I think the other reviewers who had a problem with oil probably didn't have the heat high enough on the stove.

World's Best Lasagna

Really good taste. I read the reviews first and adjusted a few things accordingly: used only a pinch of sugar and a pinch of salt in the sauce, and a pinch of salt with the ricotta. I also wished I had extra mozzerella and extra ricotta, but the end result was definitely authentic restaurant quality.

Amazing Chicken

This is a very good recipe for being so quick and easy. I made up the recipe without reading the reviews, then while waiting for the oven to preheat, I sat down and read the reviews. At that point I got nervous and added parmesan cheese, fresh parsley, garlic salt and fresh ground pepper right on top of the chicken, then tossed it all together again right in the pan. It turned out fine and was even better the next day for lunch.

Chocolate Italian Cream Cake

Doubled the cocoa in both the cake and the frosting. Didn't like the coconut in the cake, but the frosting was probably the best I've made and I've made a lot of cakes.

Ricotta Pie

The pie was beautiful, but the consistency a bit odd for those of us not used to this kind of pie. I was expecting it to be more like a custard pie, but consistency wise it was like a crumbly quiche. I cooked it only 80 minutes and added 1 t salt to pastry dough and 4 t vanilla to filling. Taste was good.
