About this Cook
I work full time, but manage to find time to cook delicious and nutritious meals for my son and me. We have a dog and a cat, who never complain about the table scraps.
My favorite things to cook
I simply love to cook - either old stand-by's or new recipes. I'm trying to "cook healthy" by cutting back on fats and salts, so I've been doing a lot of experimenting. I've been pleased with the results.
My favorite family cooking traditions
I was raised with Sunday pot roasts and lots of desserts. Sunday is still my major day to cook, and I share all the sweets with my co-workers.
My cooking triumphs
Seafood is becoming one of my favorite foods to cook and I'm very pleased with the results of some of my experiments. I also love soups and I'm willing to try something new every weekend.
My cooking tragedies
I learned the hard way not to put salt in my pinto beans until AFTER they are cooked!

Spiced Tea Mix
This mix is wonderful and soothing in the winter. I usually double the quantities so I can keep one and give one away. I find that 2 teaspoons per cup of water is too weak, but that's the nice thing about this mix... just add a little more until you figure out what ratio tastes best to you.

Mediterranean Pasta
This is a great alternative to the traditional spaghetti and meat sauce. I followed the recipe using 2 boneless skinless chicken thighs and thick cut bacon, cooked in the same pan with fresh rosemary. When done, I cut the meat into chunks and put back in the pan with the remaining ingredients (substituting fresh tomatoes for the canned). It was delicious.

Slow Cooker Guisado Verde
The combination of ingrediants produces a very flavorful pork. I have used a crockpot all my life and decided not to add the extra water. I prefer that the pork cook in its own juices along with the peppers, onions and salsa verde (I used a jar of salsa verde instead of the tomatillos). This made fantastic burritos - the meat was falling apart. The little amount of liquid was actually perfect. I didn't want a soup.
