Baked Salmon II

Too much oil and too much salt & pepper. Otherwise, would have been a 5 star recipe! I used a different recipe for some salmon out of the same bag (frozen fillets) and it did taste fishy. This wasn't fishy at all. I cooked til they looked done and they were great.

Dad's Peach Ice Cream

This was good, custardy ice cream. The problem I had was that it was too fatty. I felt almost like I was eating flavored cream. The leftovers in the bottom of the bowl were like butter. The peach flavor was mild and the consistency was good, other than being really thick.

Venison Mostaccioli Casserole

It was OK. Next time, if I make it again, I'll just mix up the noodles and meat mixture and top it with the cheeses. I don't understand the layering and it just didn't work for me. The flavor is OK. Tastes kind of Italian, which I'm not crazy about.

Cherry Poppyseed Twinks

These are different, but good. My best advice is do not overfill with jam and do not overcook. I took them out when they were barely done and they stayed soft and not too crumbly. Dipping my finger (index) in water and making the indentions was the easiest way for me. I used raspberry seedless jam. The poppy seeds add dimension. I would make these again for a party, because they do look nice and taste decent too.

Angel Lush Cupcakes

Angel food cupcakes just do not turn out. They were hard to get out of the paper liners. Also, this icing has to be refrigerated, so they can't be made ahead unless you have room to store them in the fridge. The regular cake version of this is much easier and better. Save the cupcakes for "real" cake and icing. I gave two stars because this is good, just not in the cupcake version.

Exquisite Pizza Sauce

I like my sauce a little sweet, so I made exactly like the recipe and it turned out fantastic. I made eight 8" pizzas and had plenty of sauce. Have made twice sofar and will continue to make this recipe.

Quick and Easy Pizza Crust

5 STARS! I made it in two separate batches, as I wasn't sure how much I'd need. I also let them sit longer than 5 minutes, but stayed with the recipe other than that. We wanted individual pizzas, so I bought some cheap foil pie pans and sprayed them with butter flavor Crisco spray then lightly dusted them with cornmeal. We used no more than a baseball sized dough in each. Then we brushed lightly with olive oil, topped with toppings and baked them on the very bottom rack. When they were starting to get done, I took them out of the pie pans and put them directly on the oven rack to crisp the bottoms. To say they were good is an understatement! I used the Exquisite sauce recipe on this site (with a few tweaks) and turkey pepperoni & mushrooms. For the last two, we brushed liberally with margarine and topped with a mixture of 1/3 cup sugar & 1/2 tsp cinnamon and cut them into sticks after baking (leaving them in the pan the whole time because of the butter). We used a bought vanilla glaze to drizzle over them. Not a single bite was left of pizza or cinnamon sticks! The mini pizzas were easy to work with on browning the bottoms because I used a wide spatula to insert and remove from the oven. It was a bit of work because I had 2 pizzas in the oven continuously, while making more, and I had to keep an eye on them. But the finished result was worth it. 2 batches of dough made eight 8 1/4" pie pan size pizzas/sticks. SO GOOD!

Smothered Hamburger Steak

I couldn't give 5 stars because I used 1 pkg Beefy Onion Lipton soup mix instead of beef base and reduced fat soup. I think I will add a few extra ingredients to the gravy next time so it won't have as much of a "cream soup" taste. This is nit-picking a bit, I still consider this a good recipe as is. Fast, easy, and pretty tasty.

Oatmeal Chocolate Chip Cookies IV

Oh my yummy, chewy goodness! Wonderful recipe! I cooked exactly as directed and they turned out so good. I took them out of the oven when they barely started browning on the edges. At first I thought I undercooked them, but it turned out that they were perfect. I loved that the oatmeal was not overpowering. I used large chocolate chips because that's what I had. I think minis might be better because there's not a lot of chocolate compared to regular choc chip recipes and it could "spread out" the chocolate flavor better. Are these really low fat? They sure don't taste it. This is my new favorite cookie recipe. I don't think I'll ever make regular choc chip cookies again.

Hobo Beef and Vegetable Soup

I can't give 5 stars because I did make some changes. I used stew meat, celery salt instead of seed, a bag of frozen mixed vegetables instead of canned and a 15 oz can of tomato sauce because we like it more saucy. This was a hit and I will certainly make it again, using the same changes.

Bacon N Egg Pizza

Used 6 eggs because when I poured the egg mixture, it didn't exactly cover the whole pan. I also used the bagged hash brown with the onions and peppers. Making it in a glass 9x13 was nice because I didn't have to worry about it spilling over. It was AWESOME! Such a hit and easy to make. 5 stars!

Shrimp Linguine Alfredo

A very good base recipe that can be seasoned to taste. I added 2 tsp. flour to the sauce to thicken it. I will reduce the amount of linguine to 10 oz next time to make it more saucy. Also, I will saute the shrimp and then remove it while the sauce cooks, and add it back in at the end. Tried it with scallops, and it was good as well. Solid 4 stars from me.

One Bowl Chocolate Cake III

The main problem for me was the texture and lack of substance to the cake. It's hard to explain, but it didn't taste like a homemade recipe. It was too light in texture, too crumbly, and light on flavor. Yes, it was very easy, and moist... but I was disappointed in the finished product. It had a slightly bitter taste, probably because of the Hershey's cocoa. I'll try a different recipe next time.

Cheese Spaghetti

My husband's family loves this. I only use a few dashes of garlic salt and black pepper. Not exactly what I consider a 5 star recipe, but it gets rave reviews with his family even though I consider it a bit bland and starchy myself. It's always a hit when I bring it.

Shrimp Chowder

I didn't find much to like about it other than it was edible. It was bland and I will not be making it again. FYI, no red pepper and substituted half and half were all that I changed. It was not disgusting, but there are much better ways to use shrimp.

Blueberry Streusel Muffins

Truly the BEST blueberry muffin recipe I've tried. I loved the light and fluffy texture with perfect flavor. This is my new standby. Applause to the creator! The only thing I did differently from the recipe was use 2 cups blueberries instead of 1 & 1/2 and it was perfect.

Triple Berry Crisp

Tasted like a very buttery oatmeal cookie with berries. This was an OK recipe. I cut back on the butter and cinnamon , but other than that, I made it by the instructions. It was WAY too buttery. I like the way that it had a crust and a crumb topping. I'll try something else next time or either cut way back on the butter if I do make this again. Adjustments made: 1.25 cups butter instead of 1.5 and 3/4 tsp cinnamon instead of 1 tsp.

Creamy Cajun Shrimp Pasta

Had WAY too much cajun seasoning. I threw my first batch out and made another only using it to season after the cream sauce was made. The recipe does say "to taste" so take that into account. Other than the amount of seasoning, it was an easy and good recipe. I used Tony Chachere's seasoning.

Easy Meatloaf

Needed an easy meal and was short on ingredients and this fit the bill! I doubled the topping and only used about a quarter of the mustard suggested. Really didn't need the extra topping since it ran out into the 9x13 pan and just made a mess and burned (not affecting meatloaf taste). I used seasoned bread crumbs because that's all I had and added a little worcestershire powder to the meat. Not bad at all for a super-easy meatloaf recipe. Would have given 5 stars, but mustard is way too much for my taste and prefer a little worcestershire in the topping and a smidgen of garlic in the meat. Still, worth a solid 4 stars.

Peanut Butter Balls II

Almost perfect! These are close to my mom's, who makes them without a recipe. I used a bag and a half of chocolate chips to dip them and cooled them in the freezer to make them slightly firm so dipping was much easier. I added paraffin wax to the chocolate, but didn't add enough because they were still sticky to the touch. That's the only flaw with this recipe. The chocolate needs wax to set it. (Paraffin is not generally edible, but my family has been making candy with it for years.) I might try the Dolci Frutta chocolate dip next time for a good coating without the wax and a lighter chocolate flavor.
