Cheese Spaghetti

My husband's family loves this. I only use a few dashes of garlic salt and black pepper. Not exactly what I consider a 5 star recipe, but it gets rave reviews with his family even though I consider it a bit bland and starchy myself. It's always a hit when I bring it.

Shrimp Chowder

I didn't find much to like about it other than it was edible. It was bland and I will not be making it again. FYI, no red pepper and substituted half and half were all that I changed. It was not disgusting, but there are much better ways to use shrimp.

Blueberry Streusel Muffins

Truly the BEST blueberry muffin recipe I've tried. I loved the light and fluffy texture with perfect flavor. This is my new standby. Applause to the creator! The only thing I did differently from the recipe was use 2 cups blueberries instead of 1 & 1/2 and it was perfect.

Triple Berry Crisp

Tasted like a very buttery oatmeal cookie with berries. This was an OK recipe. I cut back on the butter and cinnamon , but other than that, I made it by the instructions. It was WAY too buttery. I like the way that it had a crust and a crumb topping. I'll try something else next time or either cut way back on the butter if I do make this again. Adjustments made: 1.25 cups butter instead of 1.5 and 3/4 tsp cinnamon instead of 1 tsp.

Creamy Cajun Shrimp Pasta

Had WAY too much cajun seasoning. I threw my first batch out and made another only using it to season after the cream sauce was made. The recipe does say "to taste" so that's why it got 4 stars from me. Other than the amount of seasoning, it was an easy and good recipe.

Easy Meatloaf

Needed an easy meal and was short on ingredients and this fit the bill! I doubled the topping and only used about a quarter of the mustard suggested. Really didn't need the extra topping since it ran out into the 9x13 pan and just made a mess and burned (not affecting meatloaf taste). I used seasoned bread crumbs because that's all I had and added a little worcestershire powder to the meat. Not bad at all for a super-easy meatloaf recipe. Would have given 5 stars, but mustard is way too much for my taste and prefer a little worcestershire in the topping and a smidgen of garlic in the meat. Still, worth a solid 4 stars.

Peanut Butter Balls II

Almost perfect! These are close to my mom's, who makes them without a recipe. I used a bag and a half of chocolate chips to dip them and cooled them in the freezer to make them slightly firm so dipping was much easier. I added paraffin wax to the chocolate, but didn't add enough because they were still sticky to the touch. That's the only flaw with this recipe. The chocolate needs wax to set it. (Paraffin is not generally edible, but my family has been making candy with it for years.) I might try the Dolci Frutta chocolate dip next time for a good coating without the wax and a lighter chocolate flavor.

Sausage Balls

Bottom line... needs more biscuit mix. I made exactly by the recipe using Jimmy Dean hot sausage and sharp cheddar that I grated myself. They were good, but a half cup to a cup more of biscuit mix would be better. They were too greasy. I have made sausage balls many times and I find that if the mix is dry, just add a little water. This mix was too moist, with all the fat from cheese & sausage. It was really easy to roll the balls, but there wasn't enough dough to them.

Southwestern Style Fifteen Bean Soup

Not that great. I was generous with the 3 stars, but since i did deviate a little I thought that would be fair. I used chicken stock instead of water, only about 6 slices of bacon (precooked), added about a half of a cooked chicken and added a can of RoTel tomatoes. It was just O.K. It had a different flavor that is hard to describe, somewhat earthy I would say. My husband wouldn't eat it, but I thought it was O.K.

Summer Squash Pizza Crust

This was a decent crust for my BBQ chicken pizza, but it too difficult and much too time consuming to make for just an O.K. taste. I was able to use the squash I grew and I wanted something different, but I can't see making this again. All the parmesan cheese negates the low fat content of the squash so I don't see a real advantage. I made it thin on one pizza and thicker on the other. The thin was MUCH better. It needs to be crispy to be good. I don't think it would be good at all on a traditional italian style pizza, but with the BBQ pizza it was O.K.

Southwestern Corn Bread

I followed this recipe and did not like the results. The cornbread was bland and had a packy texture. I would have given it two stars, but I added a star because of the lower fat content, which I appreciate.

Turkey Squash Casserole

A wonderful use for the yellow squash I've been harvesting! A great recipe is one that I don't have to change a lot and this is one of those. I did use 3 cups of squash instead of 2. Next time, I think I'll cut back on the butter and not use the oil to cook the turkey to make it lighter. I don't like a lot of onion, so I might cut back a little on that too. I also thought that Ritz crackers might be good on top instead of the saltines. I seasoned the turkey with spices instead of adding them to the liquid. These are all minor adjustments. The recipe really is a 5 star for me. Will definately make again.

Meatball Mushroom Soup

It was much too thick and the taste of the Cream of Mushroom soup overpowered the taste. It would be better served without the added grains and over noodles. I will not cook again, there are better uses for the ingredients than this.

Savory Meat Pie

I made it just like the recipe and it turned out beautifully. It has a very bold, distinct flavor. I may cut the spices down to 1/4 tsp next time and the mustard down to a tsp instead of Tbsp, but it's not bad as is.

To Die For Blueberry Muffins

Cut way back on the cinnamon and batter seemed very thick, so added a little more milk. I also made them into large muffins, which was a mistake for me because I thought that made the topping too thick. My husband gave them the thumbs up, but I thought they were just O.K. I may try them again and make smaller muffins and see if I like them better. They were too crumbly and I like some crunch to the muffin tops, but this was too much. They were also very dense, which I didn't like.

Jan's Fresh Blueberry Pie

My mom loved this pie. It wasn't too tangy, and it chilled very well, not too hard, but not runny either. I cut back on the blueberries or it wouldn't have fit in the pie shell. My mom called and got the recipe from me to make it again, so I would recommend this only if you like lemon and have fresh blueberries on hand. I don't really like lemon, so my 5 star rating is based on my mom's opinion of this pie (I made it for her).

A true 5 STAR recipe (without any variations needed!!!), except for maybe a longer cooking time. I took mine out and then ended up having to put it back in the oven because the middle hadn't cooked enough. It was yummy! I will make this again!
