Apple Shortbread Pie
This was easy and tasted good but there was too much crust. The top crust was done but the bottom was still not cooked. I will be making this again but I will use less crust on the bottom and I will try with Granny smith apples. I think I will try like another reviewer said and bake the bottom crust and then add the apples and top crust.

Irish Champ
This was easy to make and tastes good too. It went great with the Irish Stew, Corned beef and cabbage.

Irish Soda Bread
I've never tasted Irish soda bread before but this was delicious. The caraway seed (which i have never used before) was a nice contrast to the sugar and raisins. I made it to take to my neighbors and they loved it. The only change I made was I used 2 cups of raisins instead of 3 because it was all I had. It was even beautiful to look at. I will definitely be making this again.
