Salsa Chicken

I've upped my review to 5 stars, because in retrospect, this dish was very tasty considering how quick and easy it was! I did not grease the pan--instead I did what another reviewer suggested and put a little bit of salsa on the bottom of the pan before adding the chicken.

Spicy Grilled Shrimp

Very tasty and easy to make. Had a bottle of minced garlic instead of garlic cloves, so used that with regular salt following the suggestion of another reviewer. Put the shrimp on skewers to grill, and had a yummy, spicy dinner. Thanks!

Spicy Garlic Lime Chicken

Very easy to make, and very tasty! I doubled the rub mixture, and let the chicken breasts sit in the rub for a couple of hours before cooking them. Otherwise, didn't change anything. Try this one!

Mocha Ricotta Creme

You MUST put the cheese, vanilla, cocoa, and splenda in the food processor and process it until smooth or it will be a funky texture. After you do that, and chill in the fridge or freezer for a little while, it's almost like a chocolate shake. Yummy!

Sage Roasted Pork Tenderloin and Beans

This was really easy to put together (besides dealing with the tenderloin itself) and tasted yummy! An earlier reviewer suggested not draining the beans, but I thought that made too much juice/sauce. I would follow the recipe -- draining the beans and artichoke hearts, but not draining the tomatoes. Also, I would salt AND pepper the tenderloin before putting it in the oven. The texture was perfect and the aroma and flavor were both wonderful!

Creamy Potato Leek Soup II

yummy! changed a few things based on other reviews--sauteed leeks with 2 cloves of garlic for 8 -10 minutes before adding to the potatoes. also used half & half instead of pure cream. so easy it almost cooks itself.
