About this Cook
I just got married and currently am a stay at home wife. I just moved 1800 miles and am trying to find my way in this new life. My husband is in the military and is a pretty picky eater when it comes to vegetables. I have been trying to find a balance of healthy foods while trying to get my husband to eat more veggies.
My favorite things to cook
I love cooking all kinds of cuisines. I try and stick to the healthy side of things and don't add a lot of oils or salt to my recipes. I love stir frys and anything with Mexican flavour. I am still learning and am really only comfortable using a recipe, I have started experimenting with substitutions and making things up with what I have on hand. so far so good! I love baking and making cakes and cookies as well.
My favorite family cooking traditions
it's not so much a cooking thing, but I love having a nice sunday dinner. It doesn't have to be fancy but just the act of getting together with family and having a nice sit down meal is something I cherish.
My cooking triumphs
I made spanikopita triangles for a christmas party a couple of years ago and they turned out amazing! It was my first time working with phylo so I was happy that it turned out!
My cooking tragedies
ha ha, since I am still learning it seems like there has been a lot. The other day I made salmon and didn't put the rice on at the right time so it wasn't done until about 20 minutes after the fish.

Turkey Shepherd's Pie
We really liked this. After reading the other reviews I wish I would have added some worchestire sauce to spice it up a bit but it was still good. I will make it again. This served 3 adults and we all had seconds.

Curried Coconut Chicken
This was really good as is but next time I will add a little less sugar because at first it was a little overpowering. After simmering for a whle it really came out delicious. The only thing I had to change was I only had a can of diced tomato and no tomato sauce. because of the excess sugar taste I decided to add a couple of spoons of plain marinara sauce (which is basically tomato sauce with a little olive oil anyway) I had so much left over I threw in a can of chick pease to the left overs and ate some for lunch the next day it was delicious! I froze the rest and can get at least another 2 meals out of it!

Actually Delicious Turkey Burgers
These were very good. I am giving it 4 stars because I made two changes. Instead of the egg I used flax seed mixed with water and because of that I added about 1/4 cup of bread crumbs because the mixture was very moist. I also sprinkled a little bit of garlic powder in there. There were really moist and since we are trying to lower our carbs we ate them without buns and a little bar b que sauce. I will make these again! Thanks for the recipe.
