Easy Chicken Enchiladas
Everyone has absolutely LOVED this when I make it. If we have people over, this is what I make. I modify it by halving the cream cheese. I coat the baking dish with enchilada sauce, add the enchiladas, smother them with enchilada sauce, and then adding the cheese. I bake it on 400 degrees for 20 minutes to make it cook faster. It still tastes the same (I've done the 350 degrees for 30 minutes as well). I highly recommend using the Ten Minute Enchilada Sauce also found on this site. It's what I always use with it and everyone loves it.
