Buttery Corn Bread

Day-After-Thanksgiving Turkey Carcass Soup

I used a box of orzo instead of rice. Also needed at least 2 more cups of stock and at least 8 more cups of water to cover the carcass of my 22 pound turkey. Works out just fine, since there is so much more soup to go around!

Pork Tenderloin with Pineapple Salsa

Tasty, but nothing to rave over. I probably won't make it again. I liked the pork better without the salsa actually. Though i really liked the salsa, just preferred it on its own with a spoon!

This was absolutely delicious. I followed the recipe pretty much exactly, with the exception of adding some red pepper flakes. I did however add something from a recipe on the food network. I took sliced sour dough bread and basted them with olive oil on both sides, salt and peppered them and grilled them on a grill pan til they were nice and golden brown. then i spread anchovy butter on one side (5 tbs softened unsalted butter, 1 tbs anchovy paste). This really helped to make the dish. It gave it that extra kick to really move it up to the professional level. Its an expensive meal, so I may look into using frozen seafood for cheaper alternatives, but as is, you can't beat it.

Baked Ziti With Italian Sausage

This was very good and very easy. Only change i would make would be to double the amount of pasta (use the whole box instead of just 8 oz) and double the amount of sauce. The quantity as is doesnt really warrant a 9x13 pan. Delicious though!

Szechwan Shrimp

Not a fan. I thought it was really pretty tasteless, aside from the red pepper flakes. Luckily I added enough of those to convince my tastebuds that i wasnt eating cotton. For all the different ingredients in the sauce, I would have thought there would be a strong flavor to it, but I tasted nothing. Will not make it again.

Spaghetti Squash I

So good!! I added red pepper flakes and omitted the olives because I didnt have any. I also cut up some hot italian sausage and tossed it in there to make a complete meal. I used red and green bell peppers in addition to the onion.

The soup tastes delicious. However adding 10 onions is absurd. I added 4 and a half and it was plenty. I added more beef broth than called for too.

Herb Turkey Rub

fabulous. I didnt have white wine worcestshire, so i used half white wine and have worcest. i also ran out of onion, so i used onion powder. In addition, i put 4 tbs of butter under the skin of the turkey breasts and i used my baster to shoot the extra marinade under the skin. I also used poultry seasoning, salt and pepper to season the bird in addition to the herb rub. It was fabulous. Really juicy and tender. Great rub!

Brandy Flamed Peppercorn Steak

TRY THIS! TRY THIS! TRY THIS! Not only was this easy and delicious, but it was fun too. Made this for valentines day and it was one of the best meals i have ever cooked. I sauteed onion and portabello mushrooms on the side and added to the sauce before serving. It was a great addition. I served with prosciutto wrapped asparagus and microwave risotto also found on this site.

Phenomenal. The best asparagus recipe I have seen. Make sure to baste the bundles with olive oil so they don't dry out.

Basic Microwave Risotto

This is a fabulous, quick and easy base. Just make sure you add your favorite ingredients, because as is, it is just plain risotto, without all the special ingredients that give it the flavors you are used to.
