Carolyn's Orange Rolls

Holy Heavenly Goodness. Light as air, delicate little buns of orangey sweet yeasty rolls...what's not to like? I did not find the dough to be difficult at all, it was cold enough that it rolled beautifully. Edit* I made these a second time on a very humid day and my dough required a significant amount of extra flour. As with any yeast bread, the amount of flour can be greatly affected by the amount of humidity in the air.

Mango Cake

I had difficulty deciding how to rate this cake. It gets a 4 for taste, but maybe only a 2 for ease of preparation. The cake browned too quickly, leaving the center un-set until I turned down the heat to 325 and cooked it an additional 15 minutes. The cake is extraordinarily moist, almost more of a "pudding" ( not like a jello pudding, but like a brittish pudding) than a cake. It was excellent served warm with a scoop of Vanilla Ice Cream.

Yogurt Whole Wheat Quick Bread

This bread turned out great. It had good texture a pleasant flavor and was super moist. I topped mine with a good scattering of Uncle Sam Cereal before baking, that was a really nice topping to it.

Lentil Quiche

The taste of this dish was pretty decent, but I can't think of any reason texture-wise, why I would ever put lentils in my eggs again. My lentils were plenty well cooked, I just didn't care for the combination of textures, and I don't generally have food-texture issues.

Coconut Ice Cream

oh yeah, this is yummy. Creamy, coconutty deliciousness. We leave the shredded coconut out of the ice cream and serve it on top! ( We like the ice cream smooth). Excellent with the coconut raspberry dream bars from this site.

Best Peanut Butter Cookies Ever

awesome cookies. The thing is, if you like cakey cookies, you won't like these. If you like flat cookies that are crispy on the outside and a little chewy in the center, these are the cookies for you. These DO spread, so give them the 2 inches between each cookie if you want nice looking cookies. Definitely do as others have and cut that sugar down by 1/2 a cup. I got EXACTLY 36 cookies out of this recipe.

Chunky Banana Nut Chip Ice Cream

Oh My Heavenly Goodness! Wow, this is such great ice cream, everybody in my family LOVED this. I did cut down the sugar by quite a bit since my bananas were VERY ripe and VERY ripe bananas are VERY high in sugar and HIGH SUGAR=Soupy Ice Cream. I would HIGHLY recommend this recipe, just watch the sugar, the riper the bananas the more you should cut down the sugar in order to get ice cream and not a smoothie as some reviewers complained. Also, try using Manzana(baby) bananas, their excellent flavor really shined through this ice cream.

Summer Vegetable Ratatouille

Its winter so I only used zucchini and no yellow squash, but this turned out awesome, just like the ratatouille I remember eating in the little french cafe I worked in as a teenager. DEliCiouS! (The only reason I didn't give it 5 stars is becuase my family didn't really think it was that awesome.)

Real Hummus

I'm hoping that this will taste really great tomorrow, since Hummus does have a tendency to be better the next day. Its missing something, and I'm not sure what it is. I followed the recipe precisely, and cut down on the salt as suggested. I like my hummus tangy, and this isn't, even with all the lemon juice.

Oaty Cereal Bars

the taste is great, but since it seems most people can't make bars out of the "bar" recipe ( myself included) I can only give it a 2. Actually getting it to make bars would boost this recipe to a 4. (I suspect some additional fat would solve the problem, but haven't tried it)

Sofrito (Greek Lamb Recipe)

Its important when using these reviews to determine how you will make this dish to understand that Balsamic Vinegar and Red Wine Vinegar ( which is what the recipe calls for) are two entirely different types of vinegar with very different levels of acidity, and flavor. I would expect that Balsamic vinegar would not have worked well in this dish at all.

Apple Sheet Cake

definitely a keeper. The pastry seemed so sticky, I was not expecting a very good crust from it, but it turned out wonderfully. It was not difficult to role, either, which I was very concerned about. I only had ingredients for half the icing, so made only a half recipe of the icing, honestly, I don't know where I would have used the rest, half a recipe was plenty. Delicious.

Hamburgers and Ketchup Gravy

This recipe had such mixed reviews I wasn't sure what to expect, but our family enjoyed it. I don't think its "company" food, but for a simple, home cooked, hearty dish, it was good, and fit the budget too. I couldn't quite imagine it over noodles, and not even mashed potatoes really. I made home fries with some green peppers and onions and served the patties with these. I'll definitely be making again, this was just plain good "comfort" food. It will probably be a popular winter dish around our house.

Beth's Chocolate Chip Cookies

As close to the "Perfect" chocolate chip cookie I've made yet. These were as attractive as they were tasty! When they first came out of the oven they looked like they would be cakey, but after they cooled a few minutes, they looked perfect. These are really good cookies. p.s. If you like something a little different, try using Kosher salt, you'll get little bits of salty sweetness......mmmmmmmmmmm delicious

Spicy Hot Chicken Legs

Not just like Buffalo Wings, but still quite tasty. My crockpot book suggests sauteeing chicken with the skin on in a few T's oil before putting into the crock-pot. Do this if you think you may eat the skin. If not, don't bother, its just extra work.

Indian Peanut Stew

I cooked rice according to package directions, and also added garbanzo beans as other users recommended. The stew came out nicely, and like others, I also had everything for it in the pantry. Unfortunately, it was about 90 degrees out the day I had this planned for supper, so we didn't enjoy it as much as we would have if it were winter. I found this to be a great budget meal though, and will definitely be saving this recipe for the cold winter months.

Sesame Chicken Pasta Salad

Delicious! I didn't have white wine vinegar, and the store I shop at does not carry it, so I used plain white vinegar, it was still delicious, though I'm sure the white wine vinegar would have been even better. I added a few chow-mein noodles for extra texture. I am only giving the recipe 4 stars, becuase I do think its lacking something. Grapes? Strawberries? Pineapple? Not quite sure which extra ingredient would make it perfect, but it could use just a little extra "zing".

Hawaiian Chicken Salad

Tasting this after mixing it up I felt it was pretty bland, so I added green onions and celery for a little extra texture and flavor. This also seemed to improve over night. I may make this again for a brunch, but probably not frequently.
