Manhattan Style Clam Chowder

This was fabulous, made it for New Years Eve. I used more clams, and put in thyme as suggested below. I had some shrimp and scallops that I needed to use so threw those in too. Guess I really had Manhattan Seafood Chowder. Keeper!

ok found a christmas morning easy casserole. just fine the way it is. it took longer to bake though, 45 minutes, even with thawed potatoes.

Overnight Cinnamon Rolls II

i always have cinnamon rolls on christmas morning, but oh the work even with other overnight ones. this is my recipe now. i don't like cooked raisins so i substituted pecans. excellent. i halved the recipe since their is only two of us and put them in a loaf pan. the rolls are pretty big, but that just calls for more topping! next time i think i'll use less sugar, and more butter, the topping was a bit thick. but, otherwise just what the season orders. thanks for posting.

Apple Cinnamon Muffins

we really really liked these!! i went looking for a somewhat healthy muffin recipe that i could send in my teenage daughter's lunch, she's a bit picky and too much junk food. these are a hit. i like the kind of dense texture- dense in a good way- they have some body. the topping makes them. i did a few little spice changes and used real sugar. they were done in 20 minutes for me too.

Quince Jelly

my grandmother always made quince jelly and it was my favorite. i can't find it anywhere in stores. her recipe did not use pectin either, and the sugar was a little less than the same volume of quince juice after being boiled and squeezed through muslin, so 4 cups of juice would be a scant 4 cups of sugar. i love this stuff.

Chicken Mexicala

i have made this and have settled on some variations; i double (at least) the amount of green chiles, i mix it up the night before and refrigerate to blend the flavors, and i sometimes use tortilla chips crushed up in place of corn tortillas. i'll use a whole chicken and stew it, and then debone using both white and dark meat.

Pork Tenderloin with Mustard Sauce

this is good. the mustard sauce is hoooo-eeee hot! but it is good. it's like chinese hot mustard. after a couple of days and reheated the pork and mustard tasted better than the 1st day.

Pumpkin Pancakes with Nutmeg Whipped Cream

yummy! i'm going to try them with the Krusteaz whole wheat/honey pancake mix i use; that you only add water so would adjust recipe accordingly leaving out the eggs etc. i used butter and maple syrup instead of whipped cream. this is great to vary how desired...nuts, more pumpkin, varying amounts of spices.

Broiled Tilapia Parmesan

I thought this was pretty good, but very salty tasting. Next time I'll use celery seed instead of salt. I used fresh grated parmesan. I'd like to try it on other types of fish, tilapia is soooo mild it gets overpowered.

Hash Brown Casserole I

I just love this. So good and comforting. I used shredded hash browns, and by mistake used double the amount of cheddar (medium) because I halved the recipe and didn't change that, but loved it with that much cheese. Also used corn flakes instead of buttery crackers and don't melt the butter and cornflakes together, just dribble the butter over the whole thing. Great consistency, not too dry or moist, just right. Definitely the hot sauce is a plus, you can't taste it as itself so don't worry. I use Frank's Red Hot Sauce. My sister has a version of this using Cream of Onion soup, but we don't have that here, and I really like the Celery Soup in it.

Orzo Shrimp Stew

great!!! it was so easy, and very good. it will be a staple here. it would have been great as written, but did a few things: i used turkey broth i still had frozen made from a turkey i had a while ago, used home grown tomatoes and fresh basil from my garden, subbed some yellow pepper and spinach for all of the broccoli, and used lemon pepper. loved it.

Blueberry Bars

Nice! I also increased the blueberries. I didn't have almond extract so I used lemon, a little less in quantity because didn't know how strong it would be. That added a very lovely flavor. They are not too sweet, just right. Next time I think I'll cut down on the amount of crust to let the berries shine through more. And cinnamon? That would be a great touch too.

Filet Mignon with Rich Balsamic Glaze

Looks like I joined a lot of other people and made this for my sweetie for Valentine's. I didn't much care for the glaze either. Too much vinegar, I used a good balsamic. Used a good red wine and drank the rest with the dinner. It did come out a nice medium rare, maybe even a bit more on the rare side. Will try a different glaze.

Creamy Potato Pork Chop Bake

i thought this was good. comfort food. i used low sodium soup, and i fried my own hash browns instead of frozen, because i like mine better. that was my only change. i will also play around with spices and such to change it. personally, i don't agree this site should be for creative healthy recipes only. it's great to have down home, just plain good easy cookin' too. we can pick and choose on our own.

Slow Cooker Spicy Black-Eyed Peas

great flavor. i also used chicken broth. in my crockpot at 5.5 hours on low the peas were still crunchy. turned it up to high for 2 hours, peas still a bit crisp, but it was time to eat. the broth was thin, that's fine with me. i did smash some peas to make it thicker. nice spice level. loved it!

Slow-Cooker Chicken Tortilla Soup

Almost 1,000 reviews, I have to weigh in too. Quite good, I enjoyed it. I too put the chicken in raw, although putting cooked shredded in may give a bit of thickness. I added rice after tasting it without. Liked both. It's very easy, and good.

Turkey Potato Casserole

pretty good! i read other reviews; i put some dressing on the bottom and halved the potatoes to control the carbs; used less cheese. i couldn't taste any cheese so i'll increase it next time. used instant potatoes since the fresh were all gone. added the french fried onions on top, very nice touch. it was nice to have the sage and thyme flavors from the dressing. i heated up some gravy too. good one for the leftovers.
