Seafood Bake for Two

Thought this was great. I recommend topping the dish with a couple of finely-diced shallots along with the garlic, etc. It adds a nice texture. Also, I didn't bother melting the butter. I just topped each piece of meat with a bit of room temp butter. Marvelous tasting dish!

Oven Roasted Red Potatoes and Asparagus

Great recipe; however, I much prefer fresh herbs so that's what I used. I recommend it.

Sukhothai Pad Thai

Reviewed: Jun. 19, 2011
Only rating this 4 stars because it needs work. That said, it's the closest thing I've found to the real deal online. Here's what you need to do to make this authentic: sub fish sauce for soy sauce (however, throw in a little soy sauce with the egg & tofu for color), sub lime juice for vinegar, MUST use tamarind pulp (if you can't find, you might be able to find tamarind chutney which will work just fine), use canola or peanut oil, add extra garlic, use extra firm tofu (water completely squeezed out), use unsalted dry-roasted peanuts and only use half of what is called for here -- that was way too much, skip the radish if you can't find it, add 1/4 cup chopped greed onions with the chives, sub chili powder for the paprika, and add dried red pepper flakes for heat. It's really, really easy to make and you will honestly think it's on par with your favorite local Thai joint. Enjoy!

Great soup! A little bland so I added red pepper flakes and several minced garlic cloves which helped.

thought it was wonderful as is. just be wary of letting your sauce cook too long as it will begin to caramelize.

Baked Spaghetti Squash with Beef and Veggies

Reviewed: Dec. 19, 2010
Loved this. Made a few changes, though, mostly just to spice it up. Used half beef and half spicy Italian sausage, and threw in a diced, seeded jalapeno. Doubled the tomatoes and garlic. Also added about a cup of cottage cheese along with the cheddar just to thicken the sauce as well as make it a bit more cheesy. Enjoy!

Great! Makes a LOT of sauce. I added lots more garlic and cayenne plus a Szechuan pepper blend, Chinese 5-spice blend, and a little fish sauce.

Ham 'n' Noodle Hot Dish

Great recipe. Easy to whip up with a moment's notice. I used macaroni pasta. Omitted the salt since ham is already so salty. Used sharp cheddar instead of processed American cheese. Lastly, crushed saltines rather than using bread crumbs. Thanks!

Charley's Slow Cooker Mexican Style Meat

Reviewed: Dec. 15, 2009
Thought this was great! My pork was tender enough to shred after the first 6 hours on high, probably due to cooking it in a broth. In addition to the ingredients listed here, I added 6 finely chopped garlic cloves, dried oregano, ground cumin, and 2 cups of chicken broth.
