Charley's Slow Cooker Mexican Style Meat

Thought this was great! My pork was tender enough to shred after the first 6 hours on high, probably due to cooking it in a broth. In addition to the ingredients listed here, I added 6 finely chopped garlic cloves, dried oregano, ground cumin, and 2 cups of chicken broth.

Cauliflower With a Kick

Great flavor but the consistency in mine didn't come out as planned. It turned out a bit soupy, but I want to try this one again b/c perhaps I steamed the vegetables too long? Loved incorporating the parsnip. I also added a few garlic cloves to the steamer.

Habanero Hellfire Chili

Excellent recipe. Although, even though I love bacon, I don't see the need for it in this recipe. I did add a bit of corn which was nice. Carrots and/or celery would also work nicely in this recipe, so I may do that next time. Also, I made this in a crock pot (browned the meat first) and therefore did not add the water. I felt the consistency was perfect when done this way.

Ratatouille

Awesome! I'm really impressed with how this turned out. However, I made a couple of modifications. I topped it off with feta cheese and ground pepper, then drizzled with olive oil. I think the dish would have been too dry without the drizzle of olive oil. When I removed it from the oven, I poured everything into a large bowl and tossed to mix all of the flavors. Also, I might suggest using a larger casserole dish than called for. I didn't even add mushrooms and my ratatouille almost didn't fit!!

This is an amazing salad! I added some onion and peppers (red bell, yellow bell, jalapeno, & poblano) for an extra component but it's certainly not necessary. I also tossed the entire salad with the dressing mixture, which I though made the salad!!

Tex-Mex Burger with Cajun Mayo

AMAZING! Thank you! I used Authentic Cajun Dust Blackening Spice for the seasoning. Best burger flavor I've had in a long time. Be sure to use ground sirloin! Oh- I didn't make the mayo but I'm sure it's great.

Slow Cooker Taco Soup

Excellent with slight revisions. I used Yves Meatless Ground Round instead of beef... couldn't tell the difference. Added 3 cloves minced garlic, reduced the water a bit, and instead of prepared taco seasoning made my own of: ground cumin, chili powder, oregano, cilantro, cayenne pepper, paprika, kosher salt, and black pepper. Also added some spinach to get some greens. YUM!

Chicken Chorizo on Quinoa with Peppers

Amazing. The quinoa was the only good quinoa I've ever tasted. Ha! I substituted andouille sausage for the chorizo and jalapenos for the poblanos. Turned out great. Also, instead of removing sausage from pan, I sliced it first, cooked, then just added everything else in according to the instructions. I thought this was easier and added flavor to the whole dish.
