Sour Cream Ganache

I agree with a previous reviewer that the sour cream is overwhelming. I added sugar to it and that improved it, but it was still too sour.

Beer Cheese Soup II

I like this soup quite a bit and wanted to share the ways in which I've been succesful lightening it up. I use 1 cup fat-free half-and-half and one cup regular half-and-half. Likewise, I use 1 cup light cheddar and one cup full-fat. I also think beef broth makes more sense in this recipe than chicken. Next time I'm going to follow other reviewers' suggestions and use more cornstarch because it is a bit thin.

Rich Chocolate Pumpkin Truffles

These truffles are delicious and very flavorful. I made them for Christmas and my family loved them. Another review said you have to crumb the wafers in a food processor or blender, but I put them in a plastic bag and smashed them with a glass. It's pretty easy. But you do have to grind the nuts. I used my coffee grinder. I think the recipe is perfect. I usually change recipes, but this one was great as-is. The only difference I found is that it made way less than 4 dozen. They would have to be miniscule to get that many.
