Beer Cheese Soup II
I like this soup quite a bit and wanted to share the ways in which I've been succesful lightening it up. I use 1 cup fat-free half-and-half and one cup regular half-and-half. Likewise, I use 1 cup light cheddar and one cup full-fat. I also think beef broth makes more sense in this recipe than chicken. Next time I'm going to follow other reviewers' suggestions and use more cornstarch because it is a bit thin.
