These are the perfect intersection of taste and health. They are low in calories and fat and have a nice, light texture and a nice sweetness. I don't understand some of the negative ratings at all. Give them a try!

Cocoa Almond Bread

Nice loaf of bread. Light taste. I don't have a bread machine, so I had to guess a little and wound up adding 1/4 cup extra of milk and some almonds and some vital wheat gluten. I baked at 350 for 30 minutes and it came out well, although a tiny bit crispy on the crust. But overall, good.

Amazing Butternut Squash

I have to disagree with some previous reviewers -- do, Do, DO use the onion. I personally really like onion with squash, especially red onions, which I use in several of my favorite recipes. Although I'm sure the sweeter take on it is good too, shun not the onion! Also, I might steal the idea of using yogurt -- for me plain -- instead of mayo for decreased sodium.

Cherry Almond Bread

It's a good start, but I agree that it needs work. The texture was really chewy and pleasing. It was hard for me because I don't have a bread machine, so I had to guess about cooking time/temp and it came out kind of dark on top. Also, I mixed with my cuisenart and the cherries got totally pulverized, so when I make it again (I will make it again) I might throw in some dried cherries, so we can get those bursts of cherry flavor. Anyway, I will try it again!

Banana Nut Yeast Bread

I took the advice of others and added to this recipe. I almost doubled the banana, added an apple pie spice blend and vanilla extract. I also doubled the walnuts and for texture I added some vital wheat gluten. I also did dry milk instead of wet. It is awesome. It smelled great cooking and I ate three pieces right off.

Pumpkin Yeast Bread

Nice recipe -- I did make some changes. I bumped up the pumpkin to 3/4 a can and then skimped on the flour, using only about 2 1/2 cups. I omitted the salt (watching my blood pressure!) and added a little vanilla and some dried cranberries 1/4 cup. Next time, I will use more cranberries. I can eat tons of this and not destroy my sodium count! Hooray!

Strawberry Lassi

I really love mango lassi, but wanted to make something a little less exotic for my husband, so this was perfect. I felt like all the flavors were in good balance (not too yogurty, just right sweetness), and would diagree with the previous review that said it was not flavorful. Of course, I was lucky to have big juicy summer strawberries, so maybe this could be a factor.

Absolutely delicious -- I did feel that the recipe had way too much powder mixture to coat the fish and half the amount would have done the trick. But a keeper recipe, at any rate.

Spinach Quiche

I took it to a work get together and it was a big hit. However, I don't know how deep the pie crusts that other people have used were, but I definitely bought "deep dish" crusts and had enough filler for 2 quiches (quich-i?) rather than just one.

Asparagus with Pecans and Parm

I couldn't believe how good this was -- best asparagus recipe ever! I did make some changes. I went with steaming the asparagus as indicated in the published recipe. However, I used fresh garlic which I cooked first with the onion, adding the mushrooms next. Also, I used fresh basil instead. Oh -- and I didn't have pecans, so I used walnuts instead.

Greek Vegetables

Very simple and yet very delicious. It smelled great while it was cooking; this recipe is definitely a keeper. One gripe though: the zuccini got mushy, so next time, I'll throw mine in closer to the end of cooking time. Otherwise, it would have gotten 5 stars instead of 4.

Grilled Portobello Mushrooms

I gave these a 5, but my husband only gave them a 3, so we'll average it out. Good flavor, very satisfying texture. He just isn't that into portobellos, so we may look at other recipes, but I felt the balsamic vinegar matched well with the flavor of the mushroom.

Real Italian Calzones

Very good. My husband and I don't eat pepporoni, so I sauteed the mushrooms with some spinach instead. I may have also neglected to seal mine well, b/c the filling "escaped" out through the seams. (Either that or I overstuffed). But they were still delicious.
