Day Before Mashed Potatoes
Although these potatoes had a good flavor, the texture was pretty unappealing to me. They came out of the fridge looking dry and cooking them only dried them out even more. I'll try again though since it is very convenient to have potatoes mashed and ready to go the day before you need them.

Cranberry-Pumpkin Cookies
These cookies were absolutely great, even my 2 year old devoured them! They were easy to make since I had leftover chopped cranberries from another recipe. Unlike some cookies, these aren't overly sweet or greasy. The texture is light and cakelike which makes them addictive. All I had was a mandarin orange, which squished and fell apart rather than letting me grate the rind so I substituted a little orange juice for the orange rind. I left out the nuts. Thanks for a great recipe, it is definitely a keeper!

Turkey Pot Pie I
This recipe is very forgiving. I had to omit the onions and celery (family preferences) and added in frozen peas. I put the filling in an extra deep pie pan and placed a 9 inch refrigerated pie crust on top. I'm sure that two crusts would have been twice as tasty, but I wanted to reduce the fat content. Everybody except my 2 year old liked it. Someone even asked for the recipe. Next time I will add more turkey, and sneak the onions back in. Thanks for a great way to use up that leftover turkey!
