Authentic Louisiana Red Beans and Rice

Reviewed: Nov. 10, 2009
I would give it 5 stars based on the aroma alone! I had to feed a lot of people and didn't have enough kidney beans to triple the recipe, so I mixed in 1 lb. black beans with 1 lb small kidney beans and 1 lb large kidney beans. Also, had to use turkey sausage (doctors' orders...). With these changes, this recipe is a 5. Without them it would probably be a 7! Thank you, Miami!

It was just OK. Not hard to fix, but not hard to forget, either.

Hasselback Potatoes

Reviewed: Nov. 3, 2009
If you need a potato dish to dress up your dinner plate, these potatoes looked great right out of the oven. But they tasted exactly like a baked potato with butter, salt and pepper ought to taste. I guess I was hoping for more.

London Broil II

Excellent! The meat was tender and flavorful, and the marinade was very easy to prepare. I made no changes to this recipe at all.

Salmon with Brown Sugar Glaze

Reviewed: Aug. 5, 2009
I made this with 2 (3 lb) salmon fillets, doubled the recipe, and scored the fish into serving-sized portions before adding the glaze. It was delicious!

Broccoli Beef I

Reviewed: Apr. 8, 2009
Very good flavor, but the dish didn't look appealing. The sauce - which I thought should have been more like a glaze - turned out to be a thick brown gravy. The dish looked like beef stroganoff. But again, the flavor was excellent. Maybe next time I'll experiment with corn starch instead of flour.

Quick and Easy Chicken Noodle Soup

Reviewed: Apr. 7, 2009
This is a souper simple, quick and delicious recipe. I made some changes to suit my family's tastes*, but nothing substantial. This recipe deserves 5 stars as written! *no celery, extra chicken, added a handful of cut green beans that I had to use soon

Slow Cooker Adobo Chicken

Reviewed: Dec. 10, 2008
Minus onion, plus bay leaf, this recipe is a keeper. But I will cut the cooking time next time - 6 hours in the crock pot was about an hour too long.

Mom's Chicken Cacciatore

Reviewed: Nov. 6, 2008
It was better than OK, but not great. Maybe I used the wrong kind of wine, but the recipe was unnecessarily vague on what wine to use.

Slow Cooker Beef Stew IV

Reviewed: Oct. 17, 2008
This 5-star rating is based on the first time I made this recipe, following the recipe to the letter. 2nd time I made it, I had run out of red wine and onions, so I used white wine to de-glaze and also added a small can of mushrooms to the slow cooker. And I added 3 beef bouillon cubes because I wanted a beefier gravy. With all my changes, it's still worth 5 stars. Thanks for the recipe.

French Bread

Excellent! Better than store-bought, and easier than driving to the store! I didn't use the sesame seeds, but otherwise followed the recipe to the letter. It came out perfect yesterday, and I'm making it again today!

Salmon with Lemon and Dill

The first time I made this, the dill was overpowering. The second time I made it, I used about half the dill. It was still overpowering. Don't know if I'll try it again.

Apple Pie by Grandma Ople

Reviewed: Sep. 10, 2008
I followed the recipe to the letter. IT WAS PERFECT!!! It's no lie - this is the best apple pie I have ever tasted! Thank you Grandma Ople! I wish I could give it 10 stars! A couple of hints: make sure there is plenty of space between your lattices (I used 3/4 inch strips, 4 horizontal and 4 vertical) for the filling to run down into the apples; pour the filling over the lattice while it is HOT and use a pastry brush to spread it out before it cools.

Pizza Dough I

Reviewed: Aug. 7, 2008
The recipe was a little vague about things like serving size, crust thickness, etc. I figured 15 servings had to be 15 slices, so I stretched it to 2 pizza pans. It was WAY too thin. I guess it's 15 really tiny servings... However, the recipe worked well as written, and tasted great. I will be making it again very soon - in 1 16" pizza pan.

Simple Ranchy Breaded Fish Fillets

I followed the recipe to the letter, but it just didn't turn out well. Maybe my heat was too high, or my filets were too thick. The parts that were not overdone tasted pretty good, though.

Pork & Pineapple Stir-Fry

Too sweet to be called stir-fry. This recipe would more accurately be called a sweet and sour pork dish. My younger kids liked it, but it was not a hit with the rest of the family.
