Coconut Bonbons
I have to make these every Christmas, and have for the past 25+ years. Make sure everything is room temp before you start mixing. It's a little work but well worth the effort to mix. Once you have them mixed well, they are not dry at all.

Sean's Mommy's Roasted Root Vegetables
This recipe was a great way to prepare several root veggies together. I did cut them up and marinate with EVOO and some other spices before putting them in the oven. My husband really enjoyed them. However, I only had to cook for 30 minutes@ 450.

Pecan Pie Bars II
It's true to it's word if you love pecan pie you will love these bars. I doubled the recipe and bake it in a jelly roll pan..got twice as many and they were wonderful.
