Perhaps my wasn't quite authentic Irish when I changed it up. I used red potatoes and mashed them with skin on so they were mostly creamy but a little chunky. I added some sour cream as well. The red skins with the green onions was lovely and makes the dish more interesting and rustic. Fantastic and a hit at my St. Patrick's Day dinner. This recipe inspired me to add green onions to my mashed potatoes for good!

Baptist Grasshopper Pie

Per other reviews I did change this up a bit but the original recipe inspired me! I used mint oreos (in processor) and melted butter to make crust. I chopped up 2 Hershey bars and added to marshmallow mixture and it still stayed smooth and creamy. Topped about half of the pie with crushed bits of the oreos so you could see the green filling. Didn't use the chocolate extract since I prefer solid chocolate. What a chocolate and mint lovers dream! AWESOME

Irish Soda Bread

Made for St. Patrick's Day and my guests loved it! I didn't have buttermilk so I used regular then I added 1 cup golden raisins and half cup dried cherries (thats what I had) and it was adequate. Dense bread like a scone but moist and interesting. Will make again next St. Patrick's Day.

Rosemary Turkey Meatloaf

My friend loved it but I thought it was very bland. I even added a bit less milk, more rosemary, and other flavors to kick it up. I used very high quality ground turkey too. Good for simple tastes but probably won't satisfy more gourmet tastes.

Real Texas Chili

Absolutely fabulous plus I made it in the crock pot! My new favorite chili. I didn't measure ingredients but added them to suit my taste buds. I served it side by side with rice pilaf and cowboy beans (pinto beans w/ fresh roasted anaheim chilis, add to sauteed onion and bacon ) in a large flat bowl. Everyone was very pleased including myself! Thanks!!! Would be good with a dark beer.

Baked Omelet

Excellent! Mine took 1 hour to bake. The glass dish made it perfect and it kept warm well. Once I let it sit for a few minutes, it formed a nice shape. I used bacon and greased the glass dish with a touch of the bacon grease for added flavor. Moist and delicious. Many variations including diet and non diet versions!

Upside Down Pumpkin Cake

This cake is absolutely fantastic! Everyone will love it! I used pumpkin pie spice with a little cinnamon; no cloves. I used walnuts. I will never make a pumpkin pie again. Make this if you want to impress everyone.
