Asparagus with Cranberries and Pine Nuts
This was really really tasty. We absolutely loved it. We did manage to burn the pine nuts and cranberries, though, while waiting for the asparagus to cook. Next time we do this I think we'll steam the asparagus separately while simultaneously cooking the crans/nuts in oil in a separate pan and then add the asparagus to the pan to toss and finish up.

Garlic Parmesan Orange Roughy
Wowie, this was amazing!! I completely left out the butter to make it healthier, and it was still just totally yummy. We also used half Miracle Whip (instead of mayo) and half regular mustard (we don't like dijon). This is so light and fresh and flavorful and I highly recommend it. YUM!

Grilled Swordfish Salad
This recipe is absolutely fabulous! Just a few suggestions.. We used A LOT less olive oil for the dressing to take the calories down. Next time I make this, I will omit the kumquats and just squeeze some fresh orange juice over the spinach instead. The kumquats did give it a nice hint of sweetness, but it was a lot of work to peel and cut them. The second night we had this, for leftovers, I cut up the swordfish and mangoes and tossed everything together and it was much tastier (and I didn't think it could get tastier!). I liked having all of the flavors mixing together. My husband and I couldn't stop talking about how yummy this was. We will make it again and again. I highly recommend it!!
