Best Brownies

I have a child with a milk allergy, so I was looking for a milk-free brownie recipe using cocoa. I used the non-dairy margarine (Fleishman's unsalted), melted the margarine in the microwave, mixed the rest of the ingredients in by hand with a wisk, and followed the recipe exactly. After these cool, they are very dense and fudgy, not at all "cake-like." I'm not sure what to make of reviews that say otherwise, but perhaps those people should try again. We will make these again for my milk-allergy babies! Everyone in the family thought they were great, though I wish I had made a double batch.

Zucchini Bread IV

I replaced half of the sugar with splenda, half of the oil with applesauce, and made them into muffins. I also left out the nuts - my three year old is not a fan. Still so good! You can't mess this one up. In fact, when my family inhaled them, I was glad I had cut back on the sugar and fat!

Awesome Carrot Muffins

I have made this recipe twice now, once with raisins and once without. I also replaced about 3/4 of the oil with applesauce and did not frost them in anyway. My toddler gobbles these up. I agree with another reviewer that they are better the next day. We put them in the freezer and defrost them one at a time for a healthy snack. They are not the *best* muffins I have ever had - but considering how much my 2 1/2 year old loves them and how healthy they are, I will continue to make them. Next time, I will try replacing 1/2 the flour with whole wheat flour.

Apple Bundt Cake

Excellent cake - I made some of the changes suggested by others: 4 cups apples, extra cinnamon, and baked at 325 since I used a dark-coated, non-stick bundt pan. Then I made my own change and drizzled a glaze over the top (2 cups powder sugar and 5-6 tbs. orange juice). The cake was SO moist, even days later and my dinner guests raved about it! Will do again.
