Baked Potato Skins

I made these tonight for my teenage son and his 4 buddies. They devoured them and asked for more (I had tripled the recipe!). I will definitely make these again.

Crustless Spinach Quiche

Loved this recipe!! I actually used a mini-muffin pan and served as an appetizer at a family gathering (made about 18). Everyone loved them and wanted the recipe. I added 1/2 cup chopped ham and also threw in 1/2 a chopped tomato. I used swiss cheese simply because I like the taste and thought it would go well with the spinach. These were very good and I will make them often. I think they will freeze well and so will be handy for breakfast on the go or a quick snack. Thanks so much for sharing.

Sangria! Sangria!

YUMMY! Made it last weekend as an adult alternative beverage at my son's 14th b-day party and it was delicious! Used Cap't Morgan's pineapple rum, cheap grocery store merlot and pineapple/orange juice instead of plain OJ. For fruit used: oranges, limes, lemons, strawberries and cherries. Soaked fruit overnight in the rum and sugar and added the wine and OJ a couple of hours prior to serving. Definitely a keeper. I started another batch of fruit soaking but didn't need it so I put it in a large ziploc bag and tossed it in the freezer to thaw and make another day. I plan on using it this weekend!

Easy Key Lime Pie I

SUPER easy and delicious! I couldn't find key lime juice and didn't feel like sqeezing a bunch of them either so used half lemon, half lime juice that come in the little plastic fruit shapped containers and it was still fantastic. This is literally the easiest pie you will ever make. I forgot that most reviewers said to use 4 yolks instead of 5 and I used 5 - don't know what difference 1 less egg yolk would have made or that this pie could have been any better without it. I used a store bought shortbread ready-made crust and it came out just fine. The filling was so smooth, set up beautifully and tasted amazing. I will definitely make this pie again and again. The one thing I did remember to do was double the recipe. Good thing too because a single batch wouln't have filled the pie shell nearly enough. Make and enjoy!!

Chicken Breasts with Balsamic Vinegar and Garlic

Excellent recipe. I needed something fast and easy and this was all that and more. I did not bread the chicken breasts and I used canned mushrooms, but other than that I followed the recipe to the T. It was delicious and omitting the breading did not detract from this dish at all. As a matter of fact I can't see how it could possibly make it any better so I'll probably make it this was from now on. I served it with garlic mashed red potatoes and steamed asparagus. Wonderful meal. My picky teenage son even asked for seconds!

Winter Fruit Salad with Lemon Poppyseed Dressing

Made this salad for Thanksgiving and it got raves from everyone that tried it. The dressing definitely makes the salad special. I did make a few changes to what I put in the salad - used feta instead of swiss and toasted slivered almonds (was all I had), but other than that I followed the recipe. I recommend the feta with this salad combination. It worked very well. I made the dressing per the recipe except I didn't have dijon mustard so use regular yellow mustard. The dressing makes ALOT. My advice - put the dressing on the side and let your family/guests put it on themselves. Not eveyone ate the salad and what was left over had to be thrown away because I had put the dressing on the salad prior to serving and it wilted. Excellent recipe though. If you are a salad lover, I definitely recommend it.

Skillet Pork Chops with Potatoes and Onion

VERY, very good!! The smell coming from my kitchen was so wonderful that I could hardly wait to eat and I was not disappointed. I am always looking for new ways to make pork chops and am so glad I came across this recipe. I did a couple of things differently but overall followed the recipe as is. I used new red potatoes because that's what I had on hand. Next I sauteed the onions and mixed them with the potatoes for layering. I added paprika, garlic powder and salt/pepper to the flour and lastly I only used 2 boullion cubes as several others said it was too salty with three. It was perfect with only 2 so I will continue to fix it this way. Thank you for a delicious, easy, one-skillet meal!

Banana Bran Muffins

I am not a huge fan of banana bread but I needed to do something with my over ripe bananas so I went to my favorite sourse - allrecipes.com. I had to make a few changes but only out of necessity and it still turned out great. First I used oats instead of wheat bran because that's all I had, I only had one egg, I threw in a 1/2 cup of ground flax seed for fiber and added a 4th banana simply because I had it and wasn't going to throw it away.I was in a hurry so instead of muffins I threw the batter in a loaf pan and made bread. OH MY GOSH! The very best banana bread ever! So moist and the flavor and texture (because of the oats and extra banana) were out of this world!! It had to bake a little longer than if I had made muffins, but was well worth the wait. I will buy banana's this weekend just to make this bread again.

Hamburger Cake

I have made this 3 times and each time I got wonderful compliments. My daughter made it for an art class project and won first prize. It takes time and effort but it is well worth it. Kids will LOVE it! It's a great cake, perfect for a cook-out or kids birthday.

Simple Scones

I just finished making a batch of each flavor. I've tasted one of each and I think my fave are the almond/cherry although all are delicious (even though I forgot the salt in the orange/cran batch)! I am hosting a bridal shower next weekend and the theme is an English tea party so I wanted to make scones from scratch. I am confident these will be a hit. If not, I don't have a problem eating them myself! The only things I did different was used salted butter (all I had) and soaked the dried fruit according to the flavor it went with (i.e. - soaked cranberries in 2T OJ, soaked blueberries in lemon juice) and threw the liquid in with the batter. I did an egg wash then sprinkled with sugar. I don't have a food processor so used an old fashioned pastry blender and it turned out great. Overall they were easy and delicious. I can't wait for the shower to see what the guests (and the bride-to-be) think of them!

Alyson's Broccoli Salad

I am not a big raw broccoli fan but I did enjoy this salad very much and so did my family. Even my 13 year old son loved it. I ran out of sugar so had to use Splenda's sugar 'blend' and I used craisins instead of raisins and regular vinegar instead of white wine vinegar (store didn't have it) but it still tasted great. The hardest part (for me) was saving the bacon for the salad. I LOVE bacon!! Fantastic recipe, thank you for sharing it.

Broiled Tilapia Parmesan

Very, very good! I do not care for fish and have always shied away from making it in the past but in as effort to eat healthier I decided to give it a try. My kids and I enjoyed this dish immensely. I used 'lite' mayo because that's what I have plus I substituted garlic powder for celery salt & onion powder for the same reason. It still turned out fantastic. Next time I may cut back or eliminate the butter to make it even more healthy. My son actually asked his sister if he could have hers! Served with steamed broccoli and salad. Excellent meal. Thanks for the recipe.

Stuffed Green Peppers I

I love this recipe. It is very similar to the one in my Betty Crocker cookbook (now held together with rubber bands!) that I have made for years. I chop up the tops of the green peppers to add to the meat mixture but other than that, I follow it to the 'T'. Sometimes I double it and use the leftovers for soup by cutting up the peppers and adding another can or two of tomato soup and water. I also add a dash or two of Franks Hot Sauce to spice it up a bit. Very easy, quick and delicious.

Beef Tips and Noodles

This was exactly what I was looking for and it was delicious. Instead of beef tips though I used a beef roast that I had thrown in the crock pot that morning before I went to work. When I got home from work I coarsely shredded the beef and set it aside. Then I cooked and drained my noodles (used Kluski dumpling noodles)and put them back into the pot. Then I mixed all the other ingredients together in the same pot with the noodles, adding the shredded beef. I stirred to mix well and let it simmer on the stove for about 20 minutes. Overall it was quick, easy and delicious. My family loved it. Thanks so much for the great recipe. I will make it often.

Old Fashioned Coconut Cream Pie

This pie was amazing! I made this yesterday for my brother's 25th wedding anniversary and my son, who at first turned his nose up at it (coconut-yuck!), asked me to make another one as soon as we got home. I will definitely make it for Thanksgiving and any other time I can find an excuse to make one. I did as others suggested and used 1-1/2 c.coconut milk and 1-1/2 c.half 'half & half'instead of 3 cups H&H, 1/3 c. cornstarch instead of flour and I used coconut extract instead of vanilla. I didn't have enough sugar so I had to use 1/4 c. Splenda but it didn't affect the taste at all. I also took one reviewers advice and cooked it in the microwave. DO NOT be afraid to do this! It saved so much time and turned out fabulous. Five minutes in the micro, stirring after every minute - perfect! Lastly, I beg you - please, please, please - do not put cool whip on this wonderful pie. If you are going to go to all the trouble of making a coconut pie from scratch, please take the time to whip up real whipped cream. It is so worth it. You will love this pie.

Country Apple Dumplings

I followed the recipe to a T and these were terrible. After all the fantastic reviews I couldn't wait to make these for a family get together and I was so disappointed! They were soggy. I may try them again and simply roll the dough covered apples in a sugar/cinnamon mixture and bake them without all the goop poured over them. If that doesn't work, I'll pitch this recipe.

Garlic Chicken Stir Fry

This recipe was delicious! My daughter and I loved it and thought it was better than anything you might order at a Chinese restaurant. I didn't have some of the vegetables but did have a bag of stir-fry veggies so I used that instead and it turned out wonderful. Next time I make it I will add cashews. Health Nut Blueberry Muffins

These muffins were soooo good! I didn't have oat bran or wheat germ so I added a cup more of oats. They were still delicious. Not everyone in my house likes blueberries so next time I am going to make them with chopped apples. I had to put them in a plastic baggie and put them in the freezer so I wouldn't eat anymore. Thanks for a wonderful recipe! I will make these often.

I made this for part of a Mother's Day brunch and it was a HUGE success. I doubled the recipe and used one roll of Jimmy Dean's hot and one mild and it was perfect. I will never use another recipe. Thanks so much!
