Chicken in Creamy Sun-Dried Tomato Sauce

This was wonderful! So easy to prepare and fairly healthy! The ingredients were things I usually have on-hand and this made a nice, elegant sauce that I would happily serve to guests! Hubby said he would definitely order it again from a restaurant! :-) Even the kids ate it, the flavor was light enough. I also cooked it for 5 hours on HIGH setting and it was very tender. I made this over egg noodles and the chicken breasts fell apart while cooking so it was more of a sauce over noodles with chunks of chicken. Delicious!

Candied Almonds

This is the 2nd recipe in as many days for the candied cinnamon almonds - this one has much better flavor but I need to perfect my methods. I wasn't ever sure when the right time to stop stirring was, but once cooled, the nuts formed kind-of a almond brittle in the pan. So now I am going through and breaking them up. I would also spray the waxed paper next time since the nuts and coating stuck to the paper. I may try this one again because the taste is great! My son and husband were eating them warm from the pan!

Spinach Pomegranate Salad

This was good and so pretty to serve! I felt the toppings were a bit too heavy and all fell to the bottom .. so in the end, we were left with lots of toppings and no spinach! Otherwise, it looked and tasted great!

Lemon Garlic Hummus

This was a good, easy recipe! I think I overdid the garlic because it was overpowering the next day but otherwise a great recipe! The only modifications I made was to add in 1 tbsp of tahini, use olive oil and I threw in a few leaves of fresh basil, as well.

Holly's Hummus

Very good! This is my 3rd attempt at hummus and the best by far! I followed the recipe with the following modifications: didn't have any fresh basil, added 1 tbsp of tahini, used probably closer to a half cup of the olives and added a tablespoon or two of the garbanzo bean juice to smooth it out. I also did not remove the shells from the beans and it has a great texture! Highly recommended! Per another reviewers comment, this is a more gourmet version of hummus and definitely not your basic flavor but wonderful all the same!

Creamy Zucchini with Linguine

This was a good recipe - quick, easy and used things I had on-hand so there was little prep! Instead of dicing the zucchini, I used a vegetable peeler and shaved off slices, this helped it cook up faster. The flavor was good and light, perfect for this hot summer day.

Sage Pork Chops

Lots of flavor, easy to make, smells wonderful while cooking - reading other reviewers suggestions, I added in some garlic, halved the salt, used rosemary instead of sage and added the cornstarch to the beef broth. I will definitely make this again but next time will not add any salt (the beef boullion more than makes up for it) and possibly add some onion and mushrooms, too!

Lemon Rosemary Salmon

Excellent and so easy! Based on other reviewers, I also added some pepper, lemon juice and minced garlic on top of the fish before adding the last layer of lemon slices. I also baked 5 mins longer than the recipe called for - the result was fabulous! It looks so elegant with the spices and lemon - I served it over brown rice with some mixed veggies. Even the kids enjoyed it! Will definitely make again!

Crumb-Topped Scallops

Wonderful! Very simple and uses common things I have on hand - I did have to cook about 5 mins longer @ 50% power than the recipe called for and I used about 1 tsp of minced garlic for more flavor. Served it with steamed asparagus - will definitely make again! This was light, easy and delicious. Next time I would make it with brown rice as the sauce was so good I wanted to lick the plate!

Eggplant Parmesan II

Wonderful! I made this for a mom's group lunch where we have one girl who is vegetarian - a big hit with everyone! From other reviewers suggestions, I also "sweated" out the eggplant with salt first to remove some of the moisture and I used four egg whites instead of the whole egg. I also cooked eggplant on each side for 10 minutes. To my breading mixture, I added a couple tablespoons of grated parm cheese and a teaspoon of garlic powder to give it more flavor. I also used italian seasoning in place of basil. Highly recommended - a little labor intensive but well worth the effort!

Smoked Salmon Pizza

This recipe caught my eye because we love all of the ingredients! The pizza had great color and eye appeal and the flavor was good - next time I think I would add some spices to give it more kick - maybe some garlic and italian herbs. Also, my sundried tomatoes were quite crispy, not sure why they were charred! Nonetheless, this was a very good recipe and I will probably make it again, albeit with a few tweaks.

Lemon Garlic Tilapia

I have been making this for years - something I just threw together on a whim ... it's a family favorite in our house and the differences I use are: fish frozen straight to the oven, bake for 30 minutes at 350, use italian seasoning mix and add in some capers! Yum! Smells great, quick and easy too, especially served over brown rice with a green vegetable!

Spicy Garlic Lime Chicken

Awesome! So easy - I put the dry ingredients on the chicken and marinated overnight. Also used some garlic powder and some minced garlic to give it more flavor. I did double the butter and lime juice and this was excellent! Very quick and great flavor - this is going on our short list of favorite recipes!

Asiago Sun-Dried Tomato Pasta

Awesome! This was a delicious and easy recipe! I used 2 cups half & half for the sauce and then added 1 cup 1% milk later on ... made the sauce in one saucepan and the pasta in another ... and left off the chicken to make it a lighter dish. Delicious and I would love to make this again and again! Hubby gave it 5 stars and the kids ate it too!

Herbed Lentils and Rice

This was good, made with extra lentils I had on hand. Very good flavor, very easy and I made it with couscous instead of rice so it had some color, too! Will definitely make for a quick summer salad when the weather is warmer!

Double Tomato Bruschetta

I made this with canned diced tomatoes as someone suggested and it was just okay. Even lots of garlic and herbs didn't improve the flavor. Next time will try with fresh tomatoes.

Zesty Lemon Loaf

This was a great and different loaf to try! Very easy, had lots of wonderful, natural smells and looks beautiful! I agree with some reviewers, that you don't need near as much lemon juice for the glaze but otherwise it was perfect as is!

Lover's Loaf

Very different and delicious meatloaf! I have never cared for the traditional, dried-out ground beef and bread crumbs recipes and this one is wonderful! The slices of meatloaf had a beautiful spiral when served and this was very easy to make! I took the 2nd loaf to our neighbors and they enjoyed it as well! A definite keeper!

Tuna Noodle Casserole from Scratch

This was good as-written but I felt it needed "something". Next time I may add some more seasonings as other reviewers have suggested, plus add some chicken boullion. I felt the amount of sauce was good, it was not dry at all! Great leftovers!
