Greek-Style Baked Salmon

So easy and elegant, too! Delicious smell while cooking, serves up nice over rice with a side of spinach. Definitely will make again! Even my 7-year old liked it!

Was so excited to make this, followed the recipe and reviewers comments exactly - not sure what happened! The yeast never bubbled and the dough never rose - we ended up a dense, flat pancake that looked terrible but tasted okay! I'm not defeated, I will try this again! I seem to not have luck with yeast ... *sigh*

Slow Cooker Pepper Steak

After making this recipe, hubby tells me he doesn't care for pepper steak! Still, I really enjoyed this recipe and shared some with my parents. Added one pepper at the start of cooking and another about 30 minutes before serving - got the benefit of both crunch and soft peppers!

Wrapped Salmon

This was really good and quick to make - I added some chopped spinach on top of each piece of salmon to give it some color. Hubby and my daughter enjoyed it. Beautiful presentation, too! The leftovers are also good but lack the crunch of the initial bake.

Pierogi Casserole

Yummy and great for a crowd! It looked heated through after 30 mins but I left it in the oven for 45 mins and the top was too crispy. Delicious with sour cream!

Lamb Chops with Balsamic Reduction

Lamb, flavor, recipe - wonderful! Easy recipe for my first time EVER making lamb (tho I love it)! I used onion in place of the shallots, still delicious and smells terrific on the stove. Only criticism: small chops mean more work to get the meat. Well worth the effort tho!

Spicy Beef Curry Stew for the Slow Cooker

Delish! Made in the crock pot - 5 hours on high. Floured the beef and browned in a skillet. Used the diced tomatoes with the jalapeno peppers, just a dash of the red pepper sauce and added some diced green peppers and some mushrooms. Otherwise, followed the recipe - smelled so good in the house! Served over baked potatoes diced up - yum! Had a nice flavor without being too hot.

Simple Ranchy Breaded Fish Fillets

Great flavor - I use Swai Fish, added some grated parm cheese in to the breading mix and also baked, per some other suggestions. Was a tad salty but still good. Served over cous cous and with a side of mixed veggies!

Connie's Zucchini "Crab" Cakes

These were good, not great. I've used other recipes that I preferred. I did not drain the zucchini but would recommend next time. Otherwise, followed recipe but added more Old Bay. P.S. My daughter loved these!

Chicken Satay

FANTASTIC! First time trying this recipe, doubled the peanut butter as other reviewers suggested! Marinated overnight and during the day, grilled for dinner - awesome! Very nice taste, a little spice but not too much. My 6-year old, 52-year old and I loved it! Cannot wait for leftovers tomorrow! Tonight I served it with asparagus, would be great with some buttered noodles or wild rice and a veggie. Yum!

Spinach Beef Stir-Fry

This was ok. I liked everything in it and it was easy/fast to prepare .. I think the sauce is bizarre to me (I made my own Chinese five-spice since I didn't have any on hand but had all the ingredients) ... it's an unusual flavor. I also didn't have water chestnuts or onion but added a frozen stir-fry mix and served over Chinese vermicelli noodles. It wasn't terrible but not my favorite either. Will have this for leftovers tomorrow - hoping it gets better overnight!
