Flourless Oatmeal Blueberry Pancakes

Great wheat free recipe! Thank you. I used one chopped up banana in place of the blueberries. My 3 year old kept coming into the kitchen and grabbing them to eat plain! I used 1 cup oats and 1 cup oat flour for a little more pancake like texture. Loved the coconut flavor from the oil!

Apple Cake and Butter Sauce

Delicious! I used 1/3 whole wheat flour and 2/3 white. I also went ahead and greased and floured a 9 inch round cake pan... I was scared to try baking this in an ungreased pie plate?! I baked it and 350 for 30 minutes and it was finished. I also used 3 large apples. For the sauce I used brown sugar instead of white sugar (like the picture I would guess) and also had way too much sauce. I don't have a double broiler either... just cooked on low and stired constantly. Definately will half the sauce. This was fabulous! Thank you for the recipe!

Apple Banana Cupcakes

These were to die for! I made crumb muffins, these were my changes: 1 C. whole wheat flour plus 1 C. all purpose flour, 1/3 C. olive oil plus 1/3 C. unsweetened apple sauce in place of shortening, 3/4 C. white sugar plus 1/2 C. brown sugar, added 1/4 t. nutmeg, added a basic crumb topping (oatmeal/butter/brown sugar), baked 10 delicious jumbo muffins @ 350 degrees for 27 minutes.

Potato Sloppy Joe Bake

This was suprisingly good! The ingredients really don't sound all that appealing but as a casserole it was yummy. I used tator tots instead of hashbrowns. Thanks for the easy recipe!

Cheeseburger Soup I

This was delicious! I followed the recipe and left out celery. I also made these changes simply for convenience: I had a pound of ground beef browned already so I threw it in a crock pot with 2 tablespoons dried onion, the basil, parsley, and butter. On the stove I boiled the potatoes and carrots in the chicken broth for about ten minutes and then poured in crock pot. I cooked on high for about an hour and then poured the milk mixture (from the stove) in stirring with a wisk. I cooked another 30 minutes then added the cheese and sour cream at the same time. Stirred every 5-10 minutes for another half hour or so and then served. I was making homemade dinner rolls and this was much easier than having to watch several pots on the stove!

Pumpkin-Apple Muffins with Streusel Topping

These were yummy but I made several changes. I'm sure the original are great... just more calories and fat! I cut the sugar in half. I used 1/4 cup oil and 1/4 cup applesauce. I used 1 cup whole wheat and 1 1/2 cups white flour. One egg and 1/4 cup egg beaters. I also used smart balance in place of the butter for the streusel. Thanks for a great recipe!

Quick Sticky Buns

Peanut Butter Bars II

These are too good!! I've made these twice. They are easy, different, and totally delicious. Everyone I've served them to agrees. I use pecans in place of walnuts. I use mini peanut butter cup baking pieces (find next to regular baking chips) and obviously don't chop them. I fold half the bag in with the nuts and press the rest on top as the recipe says. The drizzle is just extra yummy-ness! But I only use 1/2 cup chips, 1 T. butter, and 2 T. peanut butter for the drizzle, and it is plenty. These bars are awesome, thanks for the recipe!

Snickerdoodle Mix in a Jar

These got rave reviews as Christmas gifts. Everyone said they were some of the best snickerdoodles they've ever had. I also enjoyed making these... they are about 100x faster and easier to prepare than the layered cookie jars. With pretty ribbon and fabric it doesn't matter that they don't have the layered look! Something different is always a nice change.

Restaurant Style Mac and Cheese

This was fast and tasted good. I did make some changes to use what I had on hand. I used 4 slices american cheese in place of velveeta. I used 1 full cup of sharp cheddar cheese. I used 1/4 cup milk in place of the cream. And about 2 1/2 cups pasta. This was great, just as easy to make as box mac and cheese. More like two servings... definately not 4 unless this is a side dish.

Strawberry Pretzel Salad

Yummy! Time consuming and gets a little soggy after two days but this was I nice change for dessert. I pureed the strawberries as we don't like mushy fruit chunks in our desserts.

Dishpan Cookies II

These are different and delicious!!! I cut the white sugar down to 1/2 cup and they are still plenty sweet. I also used wheaties instead of cornflakes. Baked for 13 minutes and they are sooo yummy. Cut the recipe in half and it made 4 dozen regular size cookies. Hubby gives them two thumbs up!

Banana Nut Coconut Cake

Awesome! I made this the day before as suggested. Took to a bbq and it was gobbled up before all the other desserts and I got tons of compliments. This is dense and rich but oh so yummy. I cut the coconut and pecans in half for both the cake and the frosting and it was perfect and saved a lot of unnecessary calories. I also used sour cream in place of the buttermilk. I only used 3 cups of powdered sugar for the frosting and added 4 oz cream cheese. Not runny OR too sweet, just right!! This is a keeper, thanks!

Broccoli Hamburger Casserole

This was really good but I added two chopped potatoes in place of the mushrooms. Without that change I think it would have been more like soup so I'm giving it only 4 stars. My husband really enjoyed this meal and I cut the recipe in half and it was just the right size casserole for myself, husband, and our 2 year old. I also used garlic salt instead of regular salt for a little more flavor.

Gobble Up Granola Snacks

So yummy! I made the following changes and they are the perfect consistency. I used honey in place of the corn syrup. I used 1/4 cup raisins, 1/8 cup chopped pecans, 1/8 cup coconut in place of the 1/2 cup raisins. I added 4 tablespoons ground flax for health. I used old fashioned oats in place of quick and I added 1/4 teaspoon cinnamon for flavor. I followed the recipe for everything else. These are better than any store bought granola bar for sure! Make sure you spend enough time mixing the mixture so that it is evenly coated. I thought I might have the crumbly problem at first but I just kept mixing and they came out perfect!

Groovy Green Smoothie

I was skeptical about this recipe also but we think it is awesome!! What an easy way to get one of the heathliest vegetables out there into your diet. If changed this up so many times with different fruits, juices, and carrots and everytime it is good. Some better than others but the original recipe is great. Thanks for sharing!!!
