Flourless Oatmeal Blueberry Pancakes
Great wheat free recipe! Thank you. I used one chopped up banana in place of the blueberries. My 3 year old kept coming into the kitchen and grabbing them to eat plain! I used 1 cup oats and 1 cup oat flour for a little more pancake like texture. Loved the coconut flavor from the oil!

Apple Cake and Butter Sauce
Delicious! I used 1/3 whole wheat flour and 2/3 white. I also went ahead and greased and floured a 9 inch round cake pan... I was scared to try baking this in an ungreased pie plate?! I baked it and 350 for 30 minutes and it was finished. I also used 3 large apples. For the sauce I used brown sugar instead of white sugar (like the picture I would guess) and also had way too much sauce. I don't have a double broiler either... just cooked on low and stired constantly. Definately will half the sauce. This was fabulous! Thank you for the recipe!

Apple Banana Cupcakes
These were to die for! I made crumb muffins, these were my changes: 1 C. whole wheat flour plus 1 C. all purpose flour, 1/3 C. olive oil plus 1/3 C. unsweetened apple sauce in place of shortening, 3/4 C. white sugar plus 1/2 C. brown sugar, added 1/4 t. nutmeg, added a basic crumb topping (oatmeal/butter/brown sugar), baked 10 delicious jumbo muffins @ 350 degrees for 27 minutes.
