Fluffy Pancakes

Love these pancakes! We make them all the time. I do cut the sugar in half. I also double the dry ingredients and save them in a jar for future use.

Italian Spaghetti Sauce with Meatballs

I thought the meatballs were way too bread-y. I just made my traditional sauce, so no comment on it. I would recommend cutting the bread crumbs to 1/2 or 3/4 of a cup at most.

Apple Cider Pancakes

I think this would have been better with the walnuts--to counteract some of the sweetness. I thought they were good, but I next time I am going to make a reqular pancake batter (I am not really a fan of the complete mixes). They are really sweet, but a fun deviation from the normal breakfast.

Cranberry Cheesecake

Oh my gosh! This cheesecake is SO GOOD. It looks gorgeous too, not a crack anywhere. I cooked it differently than the directions though. I did prebake the crust as stated in the directions, but then I cooked it for 15 min at 350 and then at 200 for 75 min (found this on a Cheesecake Factory copycat recipe and it have not had a cracked one since). I am so happy to have a new desert for Christmas this year. You will not be disappointed!

Hamburger Vegetable Soup

This soup was surprisingly good. I didn't have onion soup mix so I used vegetable soup mix and I omitted the celery. I used spiral pasta which I think absorbed a little too much liquid. I would definitely make this again a quick and easy kid friendly dish.

Tuscan Soup

This is a good soup. I had to use mild sausage for my kid's sake and just add red pepper flakes to my bowl. I also added cream to the soup just before serving (a tip from another recipe variation).

Chantal's New York Cheesecake

I would not make this again. I am shocked at the rave reviews. The high rating is why I tried it. It looked too brown as one poster said and it was too flour-y. It also cracked horribly. The crust needs more butter. I would say this cheesecake is worse than the boxed "no-bake" cheesecake. Try a recipe with no flour or sour cream like the cranberry cheesecake on this site--it is really to die for! Happy Holidays:-)

Baked Honey Mustard Chicken

It was okay. Nothing special. My only changes were chicken tenders and fresh parsley. Also, it looked nothing like the picture...mine was almost bbq sauce colored, come to think of it, it tasted close to bbq too.

Feta and Olive Meatballs

I thought these were really good. I had to use dried parsley and I used tomato basil flavored feta. My kids and I really like them. I will make them again, but I think I will use the fresh parsley and a broiler pan next time!

Beefaroni

I thought this was really easy and yummy. Not a gourmet meal or anything but my kids and I had several helpings. I used whole wheat spirals and I also added onions and garlic to the meat while browning. It is not "saucy" so cut back on your noodles if you want more liquid.

Broccoli and Cheddar Soup

This was really easy to make and very good. I used fresh garlic and added carrots and potatoes. I do think it kind of tasted like cream of broccoli, but I used mild cheddar instead of sharp.
