About this Cook
I have a 6 year old daughter and 4 year old and 18 month old sons. I'm always looking for new ideas for kid friendly and healthy foods. I like to try new things and expose my children to things I never had growing up. Baking with my kids is always a lot of fun, too (gives me an excuse to cook up things that I would normally feel guilty about - haha).
My favorite things to cook
I will try anything once! I must say that I enjoy baking first and foremost, though. BUT - I have yet to delve wholeheartedly into baking bread from scratch (other than quick breads). Something about yeast and waiting and kneading, etc scares me. Ok, I'll be honest, I'm just a little lazy. I've told my DH on more than 1 occasion that I need a bread machine. I also love cooking "down home" country dishes - my father worked on farms when I was little. Pot pies, meatloaf and mashed potates, apple pie - yum!
My favorite family cooking traditions
I love cooking big holiday meals. There's nothing better than the smell of a fresh pumpkin pie or the warm comforting first bite of homemade stuffing. Baking Christmas cookies and decorating them with the children is a thrill. I also really get into celebrating Halloween and pretty much the entire Autumn season, so our household eats a lot of pumpkin, apples, and other harvest goodies.
My cooking triumphs
Making better lasagna, pumpkin pie and sweet potatoes than my mom. Sorry mom! Go me! I'm also quite proud of myself for making veggies interesting whenever I can. Go figure - everyone is more apt to eat them up when they go beyond "plain". lol
My cooking tragedies
I've had many and I continue to! I don't expect to be perfect or successful in every single thing I try. For example, a recent tragedy was not spraying my dish before baking cornbread - boo hiss!

Four-Bean Taco Chili
Excellent! I used homemade taco seasoning instead of store bought and substituted cannelini beans for the butter beans. Will make again.

Marinated Baked Pork Chops
Great! I marinated the chops all day and threw them in the oven for dinner. They only took 30 mins to be done perfectly. Nice flavor.

Zippy Summer Shrimp
These were good shrimp. Definitely not as spicy as I'd thought they'd be, but no biggie. I'd make them again.
