Awesome!! So delicious!! Just wanted to warn people to be careful of the type of pizza pan you use. I used the only pizza pan I own...a flat round baking stone. The problem was that I rolled the edges of the dough to keep the eggs from running all over. Didn't work though. As it baked, the dought puff up and the edges unrolled, the eggs ran off the pan and all over the bottom of my stove. I'm going to buy a pizza pan with an edge just so I don't have another big mess when I make this again....oh yes, I will definitely be making this again, but I think I'll double the recipe and add some bacon to better fill up my family of 6!! Very yummy!! We love tacos, but with 4 children 4 years old and younger, tacos are just too messy. This casserole has all the wonderful warmth and flavor of tacos with less work and mess involved. We paired this with "Sweet Corn Muffins" also from this site and the two complimented each other very nicely. Will definitely make again! My only change was to add some cheddar cheese, and I think I'll even add more cheese next time.....very good!!

WOW these are good!! Very fluffy, moist, sweet, just wonderful!! I prepared these for dinner tonight to go along side "Throw Together Mexican Casserole" also from this sight. Would also go great with chili!! Try these, they are the very best homemade corn muffins I've ever tried, and much much better than the boxed variety!! Thanks for sharing such a wonderful recipe!!
