Baked Sweet Potatoes with Ginger and Honey
I was looking for a new twist on sweet potatoes for our Thanksgiving dinner. I think it's best not to stray too far from the classics. I put in a small amount of ginger, as suggested by other reviews. But then the cardamom was the focus of the dish, rather than the sweet potatoes. My daughter, who loves sweet potatoes, rejected this with one bite. It was a big disappointment.

Brown Sugar Meatloaf
We like this meatloaf--even my toddler! It works much better to put the brown sugar and ketchup on bottom, though it seems like it should go on the top. But it's much tastier the way it's written. I've made small adjustments: I use half ketchup/half barbecue sauce, a little less milk (or else it's too mushy), and bread crumbs instead of saltines. It works out very nicely. It's become a staple food in our home.

Banana Pancakes I
This was not a success. I thought the banana taste was a bit lacking, and the pancake was too mushy--not light and fluffy at all, even after sifting the dry ingredients. My toddler loves pancakes and bananas, and turned this recipe down. I think it may be better just to use a standard pancake recipe and add chopped bananas to it.
