Becky's Chicken Salad
This recipe has a lot of potential! But when I made it exactly as the recipe directed, I found it on the edge of being inedible. I think making just two adjustments would go a long way: 1. Decrease the amount of mayo. 1 cup is way too much. I'd say start at 1/2 c, and add from there, maybe up to 3/4c. 2. Eliminate the salt. Though it was just 1 teaspoon, it made the entire thing very salty. And you can't undo that. Perhaps just add salt to taste, or none at all (which is what I'm inclined to do.)

Baked Sweet Potatoes with Ginger and Honey
I was looking for a new twist on sweet potatoes for our Thanksgiving dinner. I think it's best not to stray too far from the classics. I put in a small amount of ginger, as suggested by other reviews. But then the cardamom was the focus of the dish, rather than the sweet potatoes. My daughter, who loves sweet potatoes, rejected this with one bite. It was a big disappointment.

Brown Sugar Meatloaf
We like this meatloaf--even my toddler! It works much better to put the brown sugar and ketchup on bottom, though it seems like it should go on the top. But it's much tastier the way it's written. I've made small adjustments: I use half ketchup/half barbecue sauce, a little less milk (or else it's too mushy), and bread crumbs instead of saltines. It works out very nicely. It's become a staple food in our home.
