Gooey Brownies with Shortbread Crust

Reviewed: Oct. 15, 2011
These would be 5 stars if the cooking time was right for the brownies. I'm glad I read the other reviews because 20 minutes wasn't even close to being enough time. I added an additional 20 minutes when it was all said and done before I could take out the brownies. Otherwise, they are absolutely delicious and sinfully rich. Yum.

Actually Delicious Turkey Burgers

Reviewed: Nov. 19, 2010
My husband is a HUGE burger fan, so I wasn't sure how he'd like these. He LOVED them. I reduced the recipe for 1 pound of ground turkey and didn't add parsley since I didn't have any. PERFECT! I pan-cooked them, but they weren't getting hot enough in the center, so I finished them in the oven. I served them on some pan-grilled garlic toast and a little Dijon. My husband is already asking for them again!

Yellow Squash Casserole

Reviewed: Nov. 19, 2010
Incredible! I did make a couple changes. I sauted the squash and onion in butter instead of steaming in water; I added 1/4 cup sour cream and 1/2 cup milk instead of just using the 3/4 cup milk; and I had to add some seasoned breadcrumbs since I didn't have as many crackers at home as I thought. DELICIOUS!!!

This was so easy and very delicious. I only made a half batch and it turned out perfect. I didn't make any substitutions.

Barbie's Tuna Salad

Reviewed: Jun. 23, 2010
Since my cans of tuna were 5 ounces, I had to adjust the ingredient proportions a bit, but this was delicious! For 10 oz of tuna, well drained, I added 4 tbsp of mayo, 1.5 tbsp Parmesan, 5 tbsp sweet relish, no onion flakes because I didn't have any, 1/4 plus 1/8 tsp curry, no parsley, 1.5 tsp dill and some garlic powder. YUM!

This is my go to cornbread recipe. It comes out moist and delicious every time. I like to bake mine in muffin tins.

Taco Seasoning I

Reviewed: Mar. 3, 2010
I love this recipe because I can use the spices I always have around. The only change I made was not using red pepper flakes because I don't like them and adding 1 tsp poultry seasoning instead of dried oregano and onion powder because that's what I had.

Slow Cooker Taco Soup

Reviewed: Mar. 3, 2010
Perfect taco soup. I forgot to start it in the morning, so I made it on the stove top instead. I made a couple of changes because of this. I cooked the onions first in a little cooking spray until soft and only added one cup of water. I also did not add meat because I prefer mine without. I cooked the soup on low for two hours and the texture was perfect.

Prosciutto Wrapped Asparagus

Reviewed: May 6, 2009
I guess I didn't acutally make this recipe at all, but rather used it as a guideline. I blanched my asparagus first and then just wrapped 3 or 4 spears in one slice of prosciutto. I then baked for 10 minutes. VERY good! Next time I'll make them with the cream cheese.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: May 6, 2009
Very good. I used less sugar than called for (about half) and refrigerated my dough for about an hour while I cooked dinner and we ate. I didn't make them as large as suggested and they still came out delicious. My husband wasn't crazy about them though because he prefers soft thin chocolate chip cookies. Oh well, more for me!

We are having a bake sale at work today and someone brought these in. They used Butter Pecan cake mix instead of yellow and they are out of this world!

White Chocolate Raspberry Cheesecake

Reviewed: May 4, 2009
Incredible Cheesecake. It was the first cheesecake I ever attempted and it came out beautifully. I couldn't find any chocolate cookies, so I ended up using Chocolate Teddy Grahams and two teaspoons of dark chocolate cocoa powder. I'm rating this 4 stars because the recipe leaves out the basics of baking in a waterbath and cooling in the oven with the temp off and the door cracked. I did make the raspberry sauce as listed (very good by the way, take the extra few minutes to try it!) and added 1/4 cup of flour to the batter so I'd have a more cake-like cheesecake. I topped my cheesecake with a dark chocolate ganache and fresh raspberries.

What a great recipe! I had been craving sloppy joes for a while, but couldn't make myself eat the stuff from a can. Thank you for such a delicious, easy recipe. This is one of the few times I didn't alter anything. They're perfect as is.

Apple Pie by Grandma Ople

Reviewed: Feb. 9, 2009
Oh my. My husband hasn't quit talking about this pie since I made it on Saturday. I used this recipe as a base and added the ingredients I normally like in my apple pie. I coated the apples liberally in lemon juice. I also added some vanilla extract (about 1 tsp) and cinnamon (I only added a few shakes, but next time I will add much more) to the caramel mixture. I then tossed my apples with the caramel mixture before filling my pie plate instead of pouring over the top.

Pie Crust IV

Reviewed: Feb. 9, 2009
What a great simple recipe. I actually keep repeating the ingredients in my head for some reason. I made this for an apple pie my husband had been requesting for months. No one should be afraid of pie crust with this recipe. The only change I made was to use 1/4 cup butter and 1/4 shorting.

Quick and Easy Home Fries

I made these last night and they were terrific. I'd never made fried potatoes before, so the detailed instructions were very helpful. The only change I made was substituting one tbsp of butter for olive oil and using seasoning salt instead of regular salt.
