Zucchini Brownies
WOW! These are so delicious! I have to say, they look pretty nasty when you put them in the oven, but WOW they look and taste amazing when they come out, and that icing! You DO need the icing- maybe just drizzle it on top if you don't like too much sweet. Really great! TRY IT!

Parmesan Pork Tenderloin
This was excellent! We marinated the loin in teriyaki sauce first and forgot to add parmesan to the breading. I sprinkled the grated parmesan onto the zucchini/squash/onion mix and it was DELICIOUS. I really didn't expect it to be THAT good but we all loved it!

Easy Mini Quiches
I make these for friends all the time and so far everyone has loved them and requested the recipe. Maybe they aren't exactly Quiches, but I wouldn't be able to come up with a better name- they're delicious whatever you call them! :) I also used Cheddar cheese instead of america- just because thats what I had, and less onion when I make them for kids.
