Shredded Potato Quiche

Very good use of our leftover Easter ham! I used more hash browns, patted them into a larger pan, used 2 cups of cheddar cheese instead of swiss, and doubled everything else except the butter. I prefer casseroles such as this with bread, because even with the extra browning step, the potatoes don't get crisp enough for me. We still enjoyed it--thanks Susan!

Buttermilk Honey Bread

I thought this was a delicious tasting bread but a little dense, as it didn't rise a great deal. I only added 1 teaspoon salt because I used salted butter, and I used between 1/4-1/2 cup less flour. I might use a bit more yeast next time. Will definitely make great toast!

Plain and Simple Sourdough Bread

We loved this and used it for sandwiches with leftover Easter ham! I added a teaspoon of sugar and a tablespoon of salted butter; only used 1 teaspoon salt. I made it by hand, let it rise as a french-type loaf, slashed it and baked at 400 for about 20-25 minutes. Delicious!

Apricot Brown Sugar Ham

My ham was smaller, but I went ahead & used the full amount of glaze. We loved the flavor, and my ham was tender & juicy & the glaze was a sweet & tangy complement to the ham. I used 2 teaspoons regular mustard in place of the dry mustard.Great recipe Roz21, and I will definitely use it again!

No Bake Cookies III

These were as I remembered them from when I used to make them in the 1970s. Like other reviewers, I used 1/2 cup less sugar. We enjoyed this nostalgic treat!

Cranberry Applesauce Muffins

I think these need a little more sugar with the tartness of the cranberries, but my Mom thought they were perfect! The muffins are delicious and will be great with some honey or jelly. I think I'll take a note from jungle jean's suggestion of blueberries and add them with the cranberries next time. I used Holiday Cranberry Applesauce from this site; it includes red hot candies in the ingredients, and it made the muffins a little pink! I left out the nuts. Great recipe, and one I will definitely try again.

Granola Wheat Bread

I was quite happy to find this recipe, because I had some leftovers to use--Almond Maple Granola and Holiday Cranberry Applesauce (both from this site.) The applesauce was red from the red hot candies in the recipe, and it gave the bread a rosy hue! I made this by hand, and I will include more yeast next time, because it took quite awhile to rise, and the bread is fairly dense. The only thing I left out was the cinnamon, and I'll include it next time. The taste is awesome, and I can't wait to have it toasted. Great recipe, Star--thanks for sharing.

Oatmeal Banana Cupcakes

Very tasty, and I agree with cookinchris that they are more muffin than cupcake, especially since I subbed WW flour for 1/2 cup of the flour, and brown sugar for white. Great recipe for those too-ripe bananas!

Cracked Wheat Sourdough Bread

This is delicious bread. I am giving 4 instead of 5 stars, because like other reviewers, I think both salt and yeast are needed. I added 1/2 teaspoon and used salted butter, and I added 1 teaspoon yeast. The crust was a little too chewy for sandwiches but toasted was excellent.

Cherry Cheese Delight

We loved this--I halved the recipe but put it in a pan larger than I should have, so the crust was too thin and consequently stuck to the bottom & was hard to lift out of the pan (I may have baked a little too long too). In other words, it wasn't pretty, but it tasted great! I loved the brown sugar/praline-type crust. Very easy and delicious.

Glazed Lemon Cake

This reminded me of lemon cakes that used to be brought to church suppers. I made it for my Mom, who loves lemon anything, and she said it melted in her mouth. I used 1/2 cup oil and 1/2 cup applesauce and fat-free, sugar-free instant pudding mix. I made a little extra glaze because we like for it to soak in & around the cake. I used Sprite and love the lightness that it lends to the texture, and I used a Duncan Hines classic white mix. Just a great, classic recipe--thanks so much, Missy!

Pineapple Waldorf Salad

Very healthy & tasty recipe. I liked the pineapple, although my husband did not enjoy it that much. I left out the sugar, used vanilla yogurt, only 2 apples (all I had) and only used about 2 tablespoons of the reserved juice; I added some Craisins and some chopped dates. The sunflower seeds were great! Thanks for sharing, Lois!

Cowboy Mashed Potatoes

We thought this was really good comfort food. I used all Yukon gold, only 2 carrots (at hubby's request), and a cup of freshly cooked corn scraped from the cob. For cheese I used American, and I left out the jalapeno pepper (hubby again). I liked the fact that it was lower in fat, and I loved the addition of corn--adds a nice crunch & a bit of sweetness. A very flavorful dish!

Soft Garlic Breadsticks

We loved these--the parmesan helped make them delicately crisp, but they were soft inside and so delicious. I was concerned about the garlic--because the dough smelled strongly of garlic while it was rising--but it was perfect. I reduced the salt a little and brushed with butter mixed with garlic powder. Excellent recipe!

Simple Macaroni Salad

I really like this recipe--it is a great base for your own creativity. I used WW penne pasta and halved the recipe, reconstituting a full packet of the soup mix with about 1/4 cup water. I didn't have peppers or green onions, so I used fresh chives and added chopped dill pickles, celery & carrots, a few cherry tomatoes, a splash of red wine vinegar (will use more next time)and still thought it was just a tad dry. I will definitely try it again and tweak it a little more--the flavor was delicious!

Butter Flaky Pie Crust

I was out of shortening and needed a pie crust using all butter, and this one was perfect. I added more water, but other than that, it was an excellent recipe. It made the most pliable dough I've ever worked with and rolled easily into the size I needed, which was deep dish. It was rich and delicious, maybe not quite as flaky as one made with shortening, but I was not disappointed!

Sweet Potato Pie I

I asked my Mom if she would like a baked sweet potato for dinner, and she said she'd rather have a sweet potato pie! Since I had never baked nor eaten one, I chose this recipe because it seemed the easiest. We loved it--it was very much like a pumpkin pie. I used unsweetened coconut milk for the milk because I needed to use it. I think I'll cut back on the nutmeg next time. Delicious flavor and creamy texture--great pie!

Chinese Chicken Fried Rice I

We really enjoyed this recipe. I used a teaspoon of sesame oil and 2 tablespoons of vegetable oil, only 4 cups of rice, and left out the bell peppers. Good, basic recipe for your own additions, but I loved the pea pods!

Deep Dish Layered Salad

I was drawn to this by What A Dish's beautiful photo. My husband was at first dismayed that he wouldn't be using bottled salad dressing; then he was then pleasantly surprised after tasting the salad. I left out the mushrooms, bell peppers, and peas (otherwise he wouldn't touch it!), but even with the omissions, the salad was delicious. I loved the addition of curry powder to the dressing.

Clone of a Cinnabon

The rolls were OK, but not like cinnabons. The rolls took much longer to rise than 30 minutes, didn't want to stay together after they were cut, and I did not care for the icing. I usually make more filling for my cinnamon rolls, and I think a plain powdered sugar icing complements the rolls much more.
