Cinnamon-Raisin Granola

Excellent flavor and crunch--I love the boil & mix method--saves time in the oven! I might add just a tiny pinch of salt, and I always leave out the raisins ;-) I'll add some nuts next time.

Easy Mint Chocolate Chip Ice Cream

Reviewed: Jul. 11, 2007
Made this for my daughter--her favorite ice cream--and she said to rate it 5, for sure. I would probably rate it 4, but only because I think shaved chocolate would be better in it than chocolate chips--even the mini ones get too crunchy when frozen. I used half-and-half and 1% milk with fine results. Great flavor!

Excellent marinade for our thin-sliced steaks. Great flavor and very tender. Love the addition of the pineapple juice.

Peach-a-Berry Pie

Reviewed: Jul. 9, 2007
This is an outstanding recipe. The raspberries add just the right tartness for the peaches. Mine were mostly nectarines that I had frozen, along with some mangoes I mistakenly thought were peaches :) so there wasn't as much juice as I prefer. I can't wait to try this pie with fresh peaches, but even with nectarines and mangoes, it was delicious!

Fudgy, rich, and chocolatey. I added 1/2 cup chopped pecans for my pecan-loving hubby. Very good recipe & great instructions.

California Grilled Veggie Sandwich

Reviewed: Jul. 4, 2007
My daughter & I decided to try this today by using the marinade for Yummy Honey Chicken Kabobs for the veggies. Added basil to the mayonnaise and used slices of sourdough rosemary. The feta provided just the right amount of saltiness for the grilled sweetness of the veggies. Absolutely yummy!

Vodka Smoothie

Reviewed: Jul. 4, 2007
So refreshing for a warm 4th of July out on the patio! It was like a combination orange smoothie/strawberry daiquiri. We used homemade Coconut Ice Cream (to which I added pineapple), from this site, in place of the sherbet and a little less vodka (not my favorite). I can see adding rum & pineapple juice instead and making a pina colada smoothie! Endless possibilities. Great recipe!

Banana Crumb Muffins

Reviewed: Jun. 30, 2007
Might as well add my 5-star rating to the legion of those who have already discovered this wonderful recipe! Truly the best muffins I've ever made--moist, very banana-y, and tender. I subbed brown sugar for white, and like JMCClark added 1 teaspoon vanilla. I got 12 muffins and only baked 15 minutes. Outstanding!

Au Gratin Potatoes II

Reviewed: Jun. 27, 2007
I was drawn to this recipe thanks to Emily's mouthwatering photo, and I was not disappointed. Hubby raved, and we both had 2 helpings! I followed Emily's suggestion of using white onion, and I added about 1 tsp minced fresh rosemary. I diced my potatoes instead of shredding, so I baked mine longer. I used sourdough bread crumbs on the top and only used 1/4 cup butter--it was plenty. Even though I love the Company Potatoes from this website, I like this recipe because it uses "real" potatoes, and that really enhances the flavor. This will be a repeater at our house!

Lettuce with Buttermilk Dressing

Reviewed: Jun. 27, 2007
Very tasty dressing. I used 1/2 the sugar and 1/2 the vinegar (balsamic) due to personal preference and added a dash of dill weed and 1 tsp parm cheese. I had never thought about using a coleslaw-type dressing on lettuce, and it was very refreshing and provided a nice taste contrast to Dad's Best Burgers and Au Gratin Potatoes II, both from this site. Thanks for sharing, Jean.

Dad's Best Burgers

Reviewed: Jun. 27, 2007
Mom used to make hamburger patties with egg in them, and this recipe took me back to my childhood. I followed the recipe exactly except I used all ground beef. Instead of grilling, we broiled ours just like Mom used to, and we ate them without the bun. Very delicious and a definite keeper!

Chocolate Chip Butter Cookies

Simply awesome! Janis says it all in her description--melt-in-your-mouth, crisp, and buttery. I added 1/2 cup ground pecans and drizzled white chocolate over the top. So easy and one of the best cookie recipes I've found on this site!

Cinnamon Ice Cream

Very rich, creamy, and and delicious. I only used 1/2 teaspoon cinnamon because I was adding crushed Skor bars, and I added a little more half-and-half. Served with Pecan Sour Cream Pound Cake, from this website.

Pecan Sour Cream Pound Cake

Reviewed: Jun. 24, 2007
This is delicious! Made it for my hubby's birthday cake, and he loved it. I added 2 tablesppons sugar to the pecan mix; other than that I followed the recipe exactly. I generally don't have good luck with pound cakes, but I followed the instructions to the letter, and it was perfect--it has a wonderful crunchy crust and that good pound cake flavor. Definitely a repeat recipe.

Chicken Tortilla Soup V

Reviewed: Jun. 20, 2007
Wow, this is great soup! I used 12 oz canned chicken breast and added the broth. Used Penzey's chicken soup base to make broth and added more cumin. I only had 1/2 an onion, and it was just enough for us. Also subbed lime juice for lemon. So easy to make and really the best tortilla soup I've had. Thanks so much for sharing your recipe, Sheri S; you have a winner with this one!

Sue's Taco Salad

Reviewed: Jun. 20, 2007
Good recipe--just right for a light summertime meal. I had to leave off the beans for my finicky husband and I used more than 1/2 cup salad dressing (Creamy Buttermilk Dressing from this site). Subbed Fritos for the nacho-flavored chips. Thanks for sharing!

Creamy Buttermilk Dressing

Reviewed: Jun. 20, 2007
Wonderful dressing! My only changes were to use just 1/2 cup mayo, and half of that was FF, and to add a generous dash of Penzey's Sandwich Sprinkle. I didn't use any salt, and I love that this dressing is not highly seasoned & salted like the commercial brands. The cider vinegar adds the perfect hint of tart. I will probably add more buttermilk next time to make it a little thinner. Used this on Sue's Taco Salad, from this website. Great recipe and thanks for sharing!

English Muffins

Reviewed: Jun. 20, 2007
We enjoyed this with Egg Salad English Muffins from this site. I added WW pastry flour to the recipe and used a total of 5 cups flour. This is a dough that requires a delicate touch and minimal handling. On my griddle, the cooking time was extended to at least double.

Egg Salad English Muffins

Reviewed: Jun. 19, 2007
A very creative idea for our summertime meal. I doubled the recipe for the 3 of us, added a little more mustard, and used part FF mayo. I didn't have Canadian bacon, so I used regular bacon with good results. I think Canadian bacon would add the crowning touch! My husband rated it 5 but wished for some hollandaise. Served it on English Muffins with Chunky Applesauce, both recipes from this site. Neat idea, Deborah!
